(Santa would definitely love these!) Here’s the yum: 1 1/3 C @anthonysgoods Tiger Nut Flour 1/4 C @anthonysgoods Tapioca Flour  1/2 t Hain Baking Powder 1 T @itsgreenvalley Pumpkin 1/4 C pure maple syrup  1 t pure vanilla powder 1/4 C @barredwoods Maple Sugar (to coat) Add all of the ingredients to a medium sized bowl (except the maple sugar), and mix well.  Refrigerate the dough for at least 30 minutes (longer if you can make this ahead) to firm up. Meanwhile, line a cookie sheet with parchment paper, and add 2 tablespoons of maple sugar to a small flat dish.  Remove the dough from the refrigerator.  Use a spring-release ice cream scoop (mine is 1.5”), scoop a ball of dough into your hands, and roll into a perfect ball.  Press the ball of dough into the maple sugar to form a flat round.  Flip the cookie over, and press this side into the sugar.  I repeated this twice to make sure the cookie was well coated on each side.  Place the cookie on the tray, and repeat until all of the dough is used.  (I got 12 cookies total.) Bake the cookies in a 350 degree oven for about 15 minutes.  (You know the cookies are done when the bottoms are slightly brown.) Allow to cool for 10 minutes, then place them on a cooling rack to completely cool. Stewed Apples + Pears + Cranberries …xo ♥️ This is a wonderfully hearty and satisfying dish!  It is the perfect warm hug of deliciousness all winter long! Here’s the yum: 2 organic apples, cored and cubed  2 organic pears, cored and cubed  1/3 C @Ocean Spray Inc. Cranberries  1/4 C @Mott's Natural 100% Apple Juice 3-4 T maple syrup 1 t @Starwest Botanicals Organic Cinnamon 1 t vanilla powder Add all of the ingredients into a pan (I used the @DaTerra Cucina  11” Nonstick Frying Pan), cover with the lid, and turn the heat to medium.  When the juices begin to bubble, turn the heat to medium/low, and allow to cook for about 15-20 minutes until the fruit is soft.  Remove the lid, turn the heat up a bit, and continue to cook for about 5-10 minutes until the juices become thick.   Pour the fruit into your favorite bowl, grab a spoon, dig in, and enjoy!
