Strawberry 🍓 Greek Yogurt Mini Muffins // With Valentine’s Day approaching, there’s nothing loving about red food dye, especially for our little ones. So skip the strawberry Little Bites in the aisles of the grocery store, and make these healthier, dye free version using fresh strawberries. 💕
#Recipe 1 1/2 cups organic all-purpose flour 1/4 tsp salt 1 tsp baking powder 1/2 tsp baking soda 1 cup plain Greek yogurt 1/2 cup strawberries, puréed 1 tbsp avocado or coconut oil 1 egg 1/3 cup pure maple syrup (more or less depending on how sweet you like it) 1/2 tsp vanilla extract In a bowl, whisk together the flour, salt, baking soda, and baking powder. In a separate bowl, whisk together the greek yogurt, maple syrup, pureed strawberries, egg, vanilla, and oil. Add the dry ingredients to the wet, and mix together until combined. Use a mini muffin pan and spray with cooking oil spray (avocado, coconut, etc.) and divide batter using a tablespoon portion. Bake the muffins at 350F 15 minutes and let them cool for 5 before serving or storing. Store in the fridge for up to a week!
