🥓 🥚 🧀 Low Carb Breakfast Lasagna (that tastes like loaded hashbrowns)! 🤯  I’m all about single serving mug meals that take me just a few minutes to throw together, and this one only takes a handful of ingredients & packs in good quality protein and healthy fats without the starch.  My secret is Palmini lasagna noodles! They’re just the vegetable hearts of palm so they’re naturally low in calories and carbs, but when you rinse, drain, & boil them they’re just like lasagna noodles with a mild flavor that takes on any sauce well! I cut the noodles in half to make square shapes that I layered in a mug with  shredded cheese and crumbled bacon.   I whisked 2 eggs with 1 Tbsp heavy whipping cream and a pinch of real salt and poured into the mug, allowing it to settle between each layer. You can use a spoon to help it get between each layer if you need to.  Microwave in 30 second increments until just set. You want to be able to turn the mug sideways and not see any liquid egg; do not overcook. When eating this one it really reminds me of loaded hashbrowns at a diner, so I grabbed the Louisiana hot sauce and this became one of my new favorite easy meals! 🥔 🥞 Keto “Potato” Pancakes  Thanks to Palmini mashed, a 30 cal/4 total carb mashed potato replacement made of the vegetable hearts of palm, I can make some of my potato based favorites like potato pancakes! Palmini mashed has the exact texture of mashed potatoes, it’s mild in flavor so you can season it up however you want, and it’s already cooked so you just heat it up, it makes this recipe so fast and easy!  Just dump one pouch Palmini mashed into a bowl and season with salt, pepper, smoked paprika, garlic and onion powders. Add one beaten egg, 1/2 cup shredded cheese, and mix. Spray a skillet with avocado oil and heat over medium. Spoon in the mixture, flatten out into pancake shapes, and cook for a few minutes or so on each side until golden brown and set enough to flip with a spatula. 💃 Low Carb Fish & Grits featuring Palmini riced  I used to love carbs, but I finally figured out they don’t love my body back, so I love that Palmini offers a naturally low-carb & low-calorie (because it’s just the vegetable hearts of palm!) delicious replacement for all of my starchy favorites! I use the riced as not a rice replacement, but as you can see also for grits, hot cereal and so much more. And they make loads of pasta shapes and even mashed! For the fish & grits, drain & rinse Palmini riced then simmer in a sauce pan with a little butter, low sugar fair life whole milk, cream cheese, shredded cheese, salt, pepper, smoked paprika, garlic and onion powder and cayenne pepper until thick and bubbly.  If you’d like to make collards, I first cook bacon and onion with salt and pepper, then add in chopped fresh collards with some water, all the same seasonings I used in the Palmini, and simmer until all of the water absorbs and your collars are tender.  Then I threw some pork rinds in the blender to make a keto breadcrumb, dip some fish in egg, coat in the pork rinds and air fry until golden brown and crispy.
