would you try @lilsipper's COTTAGE CHEESE BLUEBERRY PASTRY TWISTS? - If you love cottage cheese, then you gotta try this combo of wild blueberries meshed in between a better-for-you flakey dough and protein packed cottage cheese. Dunk in your coffee, tea, or enjoy one after dinner for a treat! Check out @lilsipper's other recipe on lilsipper.com Ingredients: - 2 sheets of puff pastry (I used an organic brand I found at Whole Foods in the freezer section, no weird ingredients) - 1 cup of cottage cheese - 1 cup of frozen *wild* blueberries (must be wild, they are smaller and have 10x more flavor + antioxidants) - 1 Tbsp of grass-fed beef gelatin - 1 egg Method: First, make your blueberry jam by heating frozen blueberries in a saucepan (do not add water). Once they reduce, add gelatin and simmer while stirring for 1 minute. Remove from heat and pour into a bowl and refrigerate while you prepare the rest. Preheat oven to 375 F and place one puff pastry sheet on top of a lined baking sheet. Spread out your cottage cheese on top of the pastry sheet, then layer with chilled blueberry sauce. Cover with he other pastry sheet, slice, twist, then brush with an egg wash. Bake in the oven for about 30 minutes or until you see them brown and puffed. Allow to cool and enjoy!
