To make the veggie salad:  • peel a cucumber and dice it into tiny pieces  • dice cherry tomatoes into fourths  • dice red onion into small pieces  No need to measure anything - follow your heart 😉 Toss the veggies in olive oil, salt, pepper, and dried dill.  Store it in the fridge throughout the week!  Sandwich:  • warm hummus then spread a layer on both sides of your bread. Perfect for weeknights & the leftovers are delicious! I used my leftover cooked chicken breasts to make this. Preheat oven 350z Spread enchilada sauce around bottom of pan. Add cream cheese, cumin garlic salt & a splash of milk to cooked shredded chicken and stir. Add shredded chicken mix to each corn tortilla and place in pan. Top with enchilada sauce, scallions, Jalapenos & cheese. Bake uncovered 15 minutes.
