EASY BROILED SALMON & LEMONY COUSCOUS, a recipe that has all the comfort food vibes thanks to the couscous, served with flaky, broiled salmon for the perfect pairing. Makes 4 servings 4, 6 oz salmon filets 1 tb olive oil 1 tsp garlic powder 1 tsp paprika 1/2 tsp salt 1/2 tsp black pepper 2 tb olive oil 1 small onion, finely diced 3 cloves garlic, mashed 2 cups pearl couscous 2 1/4 cups chicken broth or veggie broth 3/4 cup freshly grated Parmesan cheese 2 lemons, juiced and grated 2 cups fresh spinach Dry salmon with a paper towel. Rub with olive oil and seasonings. Line up the salmon filets on a parchment lined baking sheet. Broil for 8-9 minutes on the middle rack or until desired doneness (I like medium-rare salmon, so 9 minutes is perfect. Remove from oven and set aside. Next, get out a 12-inch skillet. Add olive oil over medium heat. Once hot, add the onion. Sauté 2-3 minutes then add the garlic, sautéing one more minute. Next add the dry couscous, tossing well and toasting for 4-5 minutes or so, until golden and fragrant. Add the broth and mix well. Reduce heat to low, and cover. Cook for 12-15 minutes until cooked through but not soggy. There should still be some “bite.” Remove cover. Mix in the parmesan cheese, lemon zest, lemon juice and spinach. Remove from heat. Once the spinach has wilted, taste and adjust salt & pepper as needed. Serve the couscous with the salmon on the side, or for a prettier presentation, add the salmon filets back to the skillet then serve. Enjoy!
