Sun Dried Tomato Spinach & Feta Egg Wraps Sun Dried Tomato Cheese Spread 1/4 cup sun dried tomatoes, chopped 4 wedges laughing cow cheese 1/4 cup fresh grated Parmesan cheese 1/2 tbsp tomato paste 1/2 tsp Italian seasoning Combine in small bowl and stir until well mixed. Spread on one end of each lavash wrap. 4 lavash wraps 2 tbsp oil from sun dried tomatoes 2 cups spinach, chopped 1/4 cup sun dried tomatoes, chopped 1/2 tsp each Italian season and garlic powder s&p to taste 1/2 cup crumbled feta cheese 4 whole eggs, beaten 1.5 cups egg whites 1/2 cup mozzarella cheese, shredded Heat oil in a large pan over medium heat. Add spinach, seasonings and sun dried tomatoes. Sauté for a few minutes until spinach is wilted. Add feta and cook until it starts to melt. Pour in eggs and egg whites. Scramble eggs until cooked. Add mozzarella cheese and stir in to melt. Remove from heat. Add 1/4 of the egg mixture to each wrap over the cheese spread. Sprinkle with more feta. Roll up and cook the wraps until browned on both sides. Enjoy right away or wrap in parchment or plastic wrap and place in a container or ziplock to freeze. To reheat: take wrap out of the freezer the night before and place in the fridge overnight. Heat in a pan on the stove top, in an air fryer at 400 for about 8 minutes or in the oven wrapped in foil for about 10 minutes at 400. Enjoy!
