#ad Many times we run out of time before we can have breakfast. These Make-Ahead Egg Sandwiches are a great solution to this chaos. They can be made and kept in the freezer. Place a few of them in the fridge to thaw the night before and pop them in the microwave for a quick and delicious on the go breakfast option. And they are made with yummy ingredients like spinach, bacon and @Lifeway Kefir Farmer Cheese which gives the eggs a nice fluffy texture. Ingredients: 12 eggs 8 oz. Farmer Cheese 1 Tbsp. olive oil 2-3 handfuls baby spinach 6 slices precooked bacon, crumbled 1 tsp. salt Sprinkle black pepper 12 English muffins 12 slices of American cheese (or the cheese of your choice) Directions: 1. Preheat oven to 300 degrees and spray a 13 x 18 half sheet pan with cooking spray. 2. In a skillet, add olive oil and spinach. Sauté a few minutes until wilted. Set aside. 3. Split your English muffins in half and lightly toast them. Set aside. 4. Add eggs, Farmer Cheese, and salt to a large bowl and blend with an immersion blender until smooth. 5. Add spinach and bacon to egg mixture and stir. 6. Pour egg mixture into sheet pan and cook for 18 minutes. 7. Once the eggs are cool, use a biscuit cutter or a mason jar cover to cut into rounds. 8. Assemble your sandwiches. (muffin bottom, egg, cheese, muffin top) 9. Wrap each sandwich in parchment paper and store in freezer. 10. Thaw in fridge the night before and heat in the microwave for 1 minute in the parchment paper. 11. Enjoy!
