This dish is vibrant, full of flavor, and exactly what I crave when I’m in the mood for Italian food. Their Roman Rigatoni pasta pairs perfectly with the sauce, and the burrata on top takes it to the next level. Find the full recipe below! Ingredients: 8 ounces Colavita Roman Rigatoni Pasta 3/4 to 1 cup grated Parmesan cheese (reserve some for garnish) 3 garlic cloves, finely chopped or minced 1/4 cup white wine 2 shallots, finely chopped 2 teaspoons black pepper Kosher salt, to taste 1 teaspoon red pepper flakes (optional) 4 to 6 tablespoons Colavita Premium Italian Extra Virgin Olive Oil 1 (13.76-ounce) can Colavita Organic Cherry Tomatoes 2 to 3 tablespoons Colavita Sun-Dried Tomato Pesto in Extra Virgin Olive Oil 6 to 8 fresh basil leaves For Serving: 1 burrata cheese Colavita Basilolio Basil Extra Virgin Olive Oil, to taste Red pepper flakes, to taste (optional) Chopped fresh parsley (optional) Instructions: 1. ⁠Heat a large skillet over medium heat and add 4 tablespoons of Colavita Extra Virgin Olive Oil. Mix until the cheese melts and creates a creamy sauce. Gradually add more Parmesan and pasta water, as needed, to reach your desired consistency. 7. ⁠Stir in the Colavita Sun-Dried Tomato Pesto and fresh basil leaves, mixing well. 8. ⁠Serve the pasta warm with a whole burrata on top. this sundried tomato garlic bread is the best of the best.  What you’ll need: •1 Italian loaf ( I got mine from @Whole Foods Market ) •1/2 stick of softened salted butter ( I use @KerrygoldUSA ) •handfull of basil (chopped ) •1/3 cup of julienne cut sundried tomatoes with Italian herbs in oil + a large splash of the oil  •1/4 -1/3 cup grated parmesan cheese •a large pinch of Trader Joe’s Italian soffritto seasoning  Directions: 1. Preheat oven to 375 2. All all your ingredients to a bowl and mix well. 3.spread the sundried tomato garlic butter all over the Italian loaf. 4. Bake at 375 for about 12-13 mins  5.
