High Protein Chicken Salad  1 serving has 25g of protein, 145 calories and just 3g of total carbs. 👏🏼 I lost 60 lb living a keto lifestyle and chicken salad was something I ate very often. Now that I have been maintaining that weight loss for almost 5 years, I have added more healthy carbs into my diet. Hence, the apples. Even with the added apple, one serving has just 3g total carbs and 2g of sugar. 🙂 RECIPE - Makes 2 servings  INGREDIENTS: 12.5 oz can of chunk chicken in water, drained  1-2 Tbsp of mayo 2 Tbsp cottage cheese  1 apple slice, diced (about 1/5 of an apple)  1 celery stalk, diced salt & pepper to taste  DIRECTIONS: 1. Mix all of the ingredients together in a bowl and enjoy! Vulnerable post! Beginning of 2024 ---> End of 2024 🤯 I never really notice my weight loss until I look back at old pictures. I weighed in yesterday and I've officially lost 75 pounds! 2024 was the year I decided to take back my physical and mental health. I had horrible gestational diabetes with each pregnancy and it made losing any weight almost impossible. I hated myself for the longest time thinking of was my fault. My relationship with food was toxic. I was also in such a dark place mentally after my miscarriage that I didn't want to exist anymore. It took months for me to even be able to hold my niece or be excited around people who were pregnant. After having Casey, I decided to take my life back. I've worked my ass off this year. I'm in a much better place mentally and physically and can't wait to see what I can accomplish in 2025. #newyear #newme #weightloss #journey #vulnerable #weightwatchers
Pizza Stuffed Spaghetti Squash Rings I will only make spaghetti squash like this from now on! It reduced the cooking time and was the perfect portion. 👏🏼 RECIPE - Makes 4 rings INGREDIENTS: 1 medium spaghetti squash  avocado oil spray s&p to taste  1/4 cup Rao’s pizza sauce 1/4 cup good culture cottage cheese  5 slices of turkey pepperoni, quartered  1/3 cup shredded mozzarella cheese  crushed red pepper flakes  dried oregano  DIRECTIONS: 1. Preheat oven to 400 degrees F.  2. Use a fork to poke some holes in the squash.  3. Microwave it for 3 minutes to soften it a bit. 4. Trim the ends off and then cut it into 4 rings.  5. Scoop out the inside guts and seeds (like carving a pumpkin) and then place them on a parchment lined baking sheet.  6. Spritz with avocado oil spray and season with salt & pepper.  7. Bake for 20 minutes.  8. Remove from the oven and then use a fork create “noodles” by pulled the sides toward the center.  9. Add 1 Tbsp of cottage cheese and 1 Tbsp of pizza sauce to each one and mix it in with the noodles.  10. Top with pepperoni, mozzarella cheese, oregano and crushed red pepper flakes.  11. Bake for another 15-20 minutes. To make two crusts, here is what I do: 1 1/3 cup all purpose flour 1 tsp baking powder 1 cup nonfat plain Greek yogurt Optional: seasonings of choice  Each crust is 9 points on @WeightWatchers and sometimes I use half whole wheat flour instead of just all purpose which makes each crust 7 points! If you’re feeling like 2023 me — just know you’re NOT alone. I entered this year filled with so much shame, frustration, embarrassment and anger. I wanted my old life back so badly but kept going about it the wrong way. I experienced a lot of “week 1s” because I kept trying to go too hard too fast — you can’t completely overhaul your life and expect it to truly change.   So instead, I started making small changes. I knew that, at first, my only focus needed to be my @WeightWatchers journey. One meal at a time, one day at a time. Once I felt confident and in a good groove, I added in movement. And slowly but surely, my day was filled with healthy habits that I didn’t HAVE to do, I WANTED to do. I finally felt like myself again.  That sad girl that started 2024 hating herself is so, so happy now. I am not at my “goal weight” or where I was at my lowest, but this year I lost over 20 pounds (and gained lots of muscle 💪) and I found my spark. I’m so proud of everything I accomplished this year on #WW and can’t wait to see what the new year brings!
