Homemade Marshmallows Ingredients: 3 tbsp bovine gelatin 1/2 cup cold water (for blooming gelatin) 1/2 cup water (for syrup) 1 cup maple syrup or honey Bloom the Gelatin: Combine 3 tablespoons of bovine gelatin with 1/2 cup cold water in a small bowl. Let it sit for 5-10 minutes to bloom (absorb water and expand). Make the Syrup: In a small saucepan, combine 1/2 cup water and 1 cup maple syrup (or honey). Heat over medium-high heat until it reaches a boil. Combine and Whip: Carefully pour the hot syrup into a large mixing bowl with the bloomed gelatin. Begin whipping immediately using a stand mixer or hand mixer on low speed, then gradually increase to high speed. Whip for 8-10 minutes, or until the mixture becomes thick, white, and fluffy. Transfer to a Pan: Line a baking pan with parchment paper. Add arrowroot or powder sugar or lightly grease the paper with oil or cooking spray to prevent sticking. Pour the marshmallow mixture into the pan and spread evenly with a spatula. Set and Cut: Refrigerate the pan for about 1 hour, or until the marshmallows are firm. Remove from the pan, cut into desired shapes, and dust lightly with arrowroot powder or powdered sugar to reduce stickiness (optional).
