Reese’s Cocoa Puffs Cereal made from… CHICKPEAS? 🤯🍫🥜🥣 RECIPE: Ingredients: 1 can chickpeas  1 tablespoons cocoa powder 1 tablespoon peanut butter powder 2 tablespoons maple syrup  Directions: 1. Drain and rinse the chickpeas. Pat dry.  2. Mix the chickpeas with maple syrup, pb powder, and cocoa powder.  3. Lay on a baking sheet (I used silpat to prevent sticking.) 4. Bake at 425F for 20-25 minutes. Let cool.  5. Veganuary - Day 3 While eating tofu is not required in a plant based diet, it certainly is a great source of protein and a relatively low calorie food. So what exactly do you do with this white block of food? Since alot of people are put off by the texture, I recommend grating the tofu and then seasoning it. Let me me know if you try the recipe below, ⬇️ I think you will love it Question: What do you do when you you want to make egg rolls, but you don’t have any egg roll wrappers? Answer: use tortillas and make egg roll quesadillas instead 🌱Easy Egg roll Quesadillas 🌱 1 tbsp oil 8 oz extra firm tofu 1 cup grated cabbage 1/2 cup grated carrots 1 tbsp toasted sesame oil 1 tbsp garlic powder 1 tsp ginger powder 2 tbsp tamari 1 tbsp coconut aminos 1 tbsp sesame seeds 1 tsp white pepper 3 large tortillas cut in half Dipping sauce: 1 tbsp tamari 1/2 tbsp gochujang 1/2 green onion chopped 1 tsp sesame seeds Grate the tofu , cabbage & carrots Heat a large frying pan, add the oil. Add the tofu, cabbage and carrots and sauté for 1 -2 minutes. Add the garlic , ginger, sesame oil, tamari, coconut aminos, sesame seeds and pepper. Cook for about 5 minutes more Place 1/2 of the tortilla in a plate . Add a scoop of of tofu mixture to the middle and fold in each side. Continue until all of the tortillas are filled Heat a large frying pan over medium high heat and add some oil. You can actually come up with a couple of different sauces that you could use in a variety of different dishes. I use this Asian style sauce on fries yesterday and today I put it on some noodles with some other ingredients, I can easily use it on tofu or rice or a variety of other dishes but the ideas I don’t have to come up with something new every day. I tweak a couple of things to make it a little bit Different But it makes life much easier. 🌱Spicy Udon Cashew Noodles🌱 INGREDIENTS: 2 packages udon noodles  2 tablespoons sesame oil 1 package sliced shiitake mushrooms  2 garlic cloves grated 1 small knob ginger grated  2 green onions chopped 1/2 cup raw cashews  1 tablespoon rice wine vinegar  2 tablespoon tamari 1 to 2 tablespoons sriracha  1 teaspoon cornstarch  1/4 to 1/2 cup  noodle cooking water 1 tablespoon white sesame seeds  1 tablespoon black sesame seeds Fresh cilantro chopped Cook the udon noodles and drain. Reserving about 1/4 to 1/2 cup of the cooking water Heat a frying pan over medium high heat Add the oil. When the oil is hot add the mushrooms and cook until golden. Add the garlic, ginger and onions, sauté for about 30 seconds . Add the cashews , corn starch and cooking water . And cook for about 1-2 more minutes.  Add the noodles to a bowl , top with the mushroom mix, add in the spinach and stir until wilted. It’s no secret that I love french fries I always have. I also like to experiment with different toppings for french fries so I’d always just have them with ketchup. These Asian style street fries are loaded with flavor and completely addicting. I hope you try them. INGREDIENTS: 1 bag frozen steak fries 1 tablespoon rice wine vinegar  1 tablespoon tamari 1 to 2 tablespoons chili crisp oil 1/2 tablespoon date syrup 2 green onions chopped  1 tablespoons sesame oil (heated) 1 tablespoon white sesame seeds  1 tablespoon black sesame seeds Fresh cilantro chopped Air fry (or bake) the fries at 400° for about 15-18 minutes until cooked and  golden  While the fries are cooking , add the vinegar, tamari, date syrup, green onions, chili crisp, and the oil to a small jar ( or bowl) and stir together until combined . Add the fries to a plate , top with the sauce, sesame seeds and cilantro. I’m here to tell that you  really don’t ! There are so many plant-based options of the foods that you love that may not taste exactly the way they used to, but they have enough of the flavor point to satisfy you so if you’re thinking about starting another couple of days, keep the one in mind  Swap out the crab and use artichoke hearts for a delicious vegan crab cake. 🌱🌱Vegan “Crab” 🦀Cakes🌱🌱 Ingredients: 2 (7 oz) jars marinated artichoke hearts, drained. 1 box (15 oz) chickpeas , drained and rinsed 2 cippolini onions diced 3 tbsp chickpea flour 3 tbsp vegan mayo 1 tbsp dijon mustard 1 tbsp old bay seasoning 1 tbsp garlic powder 1 tsp salt couple cracks of fresh pepper 1 cup chopped italian parsley 1 cup panko breadcrumbs Oil (for frying)   Add the artichoke hearts, chickpeas and onions to a food processor and pulse a few times. (you want to just break up the pieces bit , but leave it  crumbly) Add the mixture to a bowl,  add the chickpea flour, mayo, mustard, old bay, garlic powder, salt , pepper and parsley  and gently stir to mix together.  If you have the time, pop the bowl into the refrigerator for about 30 minutes to firm up the mixture. (I only did this for about 10 minutes but in think longer would have been better). Form a patty with your hand and dip in the breadcrumbs, coating both sides. Cook in hot oil for about 3 - 5 minutes on each side until browned. Happy New Year amigos! 🎉 Even though this little guy is from 2000, the wishes are still current!  My husband worked hard to find the whole collection of these fast food chain chihuahuas toy dogs (including this One)They were a limited edition and he had to put considerable effort into finding the whole set at multiple locations.  Every year I take them out for the holidays and then carefully stow them away again. As we start the new year I am reminded of the effort and love he put into this.  May we all start the year putting the same effort and love into all of our relationships. May we also remember the little effort it takes to be kind .  It is far easier and more rewarding to be happy than sad , to be kind vs uncaring. Sorry for my tired morning voice 🤦🏽‍♀️ 15 years ago I was diagnosed with diabetes. When I was pregnant with my first child, I had gestational diabetes and it never went away. It has been a hard road and I’ve tried so many different medicines diet plans and nothing really seems to work. Came across this book about reversing. diabetes with a Whole Foods plant based vegan diet so today’s my day one. I’m going to be getting a menu and grocery list together and start this journey. I know it’s going to be incredibly hard to change how I eat and live but I have three children. I need to stay alive for so this change is so necessary!! the medicines they have me on hurts my stomach so bad some days I can’t even get out of bed. Because of one of the medicines I was put on last year I had to have my gallbladder removed. i’m just ready to feel better and have energy to hang out and enjoy life with my family. I hope you’ll follow along my journey. I could use all the support I can get and would love to help others with diabetes. I’m excited to start this new way of life and can’t wait to see the results in my A1c numbers in three months.
