Stir Fry the Vegetables: Begin by heating 1 tablespoon vegetable oil in a large pan. Add the sliced bell peppers, broccoli, and onion. Stir fry for about 3-4 minutes until the vegetables are tender-crisp. Add the minced garlic and cook for another minute. Once done, remove and set aside. 2. Season the Chicken: In a mixing bowl, drizzle vegetable oil over the chicken and season it with the specified seasonings. 3. Cook the Chicken: In the same pan, heat another tablespoon of vegetable oil over medium-high heat. Add the chicken pieces and cook them until golden brown and fully cooked, approximately 5-7 minutes. Remove the chicken from the pan and set it aside. 4. Cook the Shrimp: Using the same pan, add an additional tablespoon of vegetable oil and minced garlic. Add the shrimp and cook until they turn pink and opaque, around 2-3 minutes. Once cooked, remove the shrimp and set them aside with the chicken. 5. Prepare the Rice: In the same skillet where the vegetables, chicken, and shrimp were cooked, add the rice and stir for 1 minute. Then, pour in chicken broth or water and bring it to a boil over high heat. Once the rice begins to boil, reduce the heat, cover with a lid, and let it cook. 6. Making the Sauce: In a saute pan, whisk together jerk seasoning, lemon juice, honey, and heavy cream until well combined. Adjust to your liking and set aside. 7. Combine and Serve: Return the cooked chicken, shrimp and vegetables to the pan with the rice. Pour the spicy creamy jerk sauce over the mixture. Stir well to coat everything evenly and cook for an additional 1-2 minutes until heated through, then enjoy your flavorful and spicy stir fry!
