3 Ingredient Coconut Cream Chocolate Truffles! They’re gluten free, dairy free, and refined sugar free, and the perfect easy Valentine’s Day dessert. Ingredients •1/2 cup (4oz) canned coconut cream •5oz dark chocolate (I use dairy free & refined sugar free chocolate) •1/2 cup shredded, unsweetened coconut Instructions 1. Add 1/2 cup coconut cream to a saucepan and heat over low heat until hot. Once hot, turn off the heat/remove from the heat and add in 5oz chocolate. Mix the coconut cream and chocolate together until smooth then stir in 1/2 cup shredded coconut. 2. Allow the mixture to cool to room temperature then place in the fridge until the mixture is hardened. Once hardened, remove from the fridge and scoop the mixture into balls using a cookie dough scoop. 3. Roll into balls using the palms of your hands then coat each ball in shredded coconut flakes or dip in additional melted chocolate and sprinkle with shredded coconut. 4. Place the truffles on a tray lined with parchment paper and place in the fridge until fully hardened. Once hardened, dig in and enjoy! 5. Ingredients: •1/3 cup canned coconut cream •3/4 cup shredded, unsweetened coconut •1/3 cup dark or semi-sweet chocolate (I used dairy free and refined sugar free chocolate — use sugar free chocolate to keep the recipe sugar free) •1 tsp coconut oil Instructions: 1. Mix together the coconut cream and shredded coconut in a bowl then scoop the mixture with a tablespoon or cookie dough scoop and roll into balls. 2. Place the balls on a tray lined with parchment paper and place in the freezer for at least 1-2 hours to harden. 3. Once the balls are hardened, melt the chocolate and coconut oil in the microwave or using the double boiler method, stirring frequently until melted. 4. Once the chocolate is melted, remove the coconut balls from the freezer and dip each one in the melted chocolate. Place the chocolate coated balls back on the lined tray and sprinkle with flaky sea salt (optional).  5. Place the truffles in the fridge until the chocolate shell hardens, then dig in and enjoy! Store leftovers in the fridge. Notes: •For a sweeter truffle filling, use sweetened coconut flakes or add a little bit of a natural sweetener to the truffle filling (e.g. honey, maple syrup, coconut sugar) •If the filling is too dry, add more coconut cream.
