Simple Potato Soup! Cozy, creamy, and easy to customize! 12 ounce package of bacon, Chopped 1 diced onion 1/4 cup all purpose flour 4 cups chicken stock Salt & pepper to taste 4 to 5 cups peeled & diced potatoes 1 & 1/2 cups of milk or cream Toppings: Cheese, Bacon, Sour cream In a large pot fry the bacon until crispy. Remove, drain, and add back in about 1/4 cup of the bacon fat (butter or oil can be swapped out for the bacon fat). Sautee diced onion until soft. Stir in 1/4 cup of all purpose flour to make a roux, cook for 2 to 3 minutes until lightly golden. Slowly whisk in 4 cups of chicken stock, stirring until smooth. Season to taste with salt & pepper for a classic baked potato flavor. Add diced potatoes & milk or cream and simmer until potatoes are fork tender (approximately 15 to 20 minutes) Blend to your preferred consistency (chunky, smooth or inbetween) Serve topped with cheese, bacon, and sour cream (Plus crusty bread for dipping) Enjoy!
