Gumbo! I claim no authenticity here, just using what I had on hand but it turned out amazing! Serves 6 to 8 4 boneless skinless chicken thighs-seasoned with cajun seasoning 12 ounces smoked sausage-sliced 1/2 lb frozen peeled shrimp 2 TBSP Oil 2 bags (20 ounces total) frozen seasoning blend (onion, celery, bell pepper) 3 garlic cloves, minced 6 cups chicken stock (store bought, homemade, or bouillon works as well) For the roux: 2/3 cup of oil 1 heaping cup all purpose flour Homemade creole seasoning: 2 1/2 teaspoons paprika 2 teaspoons salt 2 teaspoons garlic powder 1 teaspoon pepper 1 teaspoon onion power 1 teaspoon cayenne 1 teaspoon thyme 1) Season chicken with cajun seasoning and sear in oil (4 min per side) remove and bronw the sausage then set that aisde too. 2) Add frozen seasoning blend to the pot, scraping up brown bits, set aside and wash the pot 3) Add oil & flour to the pot, whisking constantly over medium heat until it turns a deep brown color (takes approxiimately 30 mintutes, do not rush this step!) 4) Stir in cooked veggies and garlic, then slowly whisk in chicken stock. Add the creole seasoning and bring to a boil 5) Add back in the chopped chicken, sausage, and shrimp, simmer for 5 minutes until shrimp is cooked and serve over hot white rice.
