Ingredients:  -chocolate raspberry jam  -1/2 cup plain Greek yogurt  -1/2 tsp. vanilla bean paste Directions: Toast your bread however you prefer. I toast mine with a bit of butter in a skillet over medium heat for extra flavor and a super crisp exterior!  In a small bowl, combine your Greek yogurt and vanilla bean paste.  Layer your yogurt mixture and chocolate raspberry jam in alternating spoonfuls! Warm, brown sugar cinnamon oatmeal with pops of juicy (yes juicy) raisins is a staple from my childhood 😌 There are a million and one recipes for healthy oatmeal, so if that’s what you’re looking for, respectfully, this isn’t the recipe for you. But if you’re looking for a warm bowl of oatmeal with all the comforting flavors of brown sugar, cinnamon, and vanilla, I promise this will be a keeper.  INGREDIENTS • 2 cups old fashioned oats • 4 cups milk (I use unsweetened vanilla almond) • 3/4 cup light brown sugar • 1 1/2 tsp cinnamon • 1 cup raisins • 1 tsp vanilla bean paste • Start by bringing your oats and milk to a boil of medium-high heat. Should take roughly 5-ish minutes. Stir frequently. • Once boiling, reduce heat to a simmer and toss in your raisins. I add raisins at this step to allow them to soak in some of that warm milk. This makes them soft and pillowy and is a CRUCIAL step to how I prefer my oatmeal. If you throw the raisins in as a topping, they will be cold and firm. No thanks. Oh, and continue to stir frequently for roughly 10 minutes. • Once oatmeal has reached your preferred consistency (I like mine creamy vs soupy), add in brown sugar, cinnamon, and vanilla. Baked Feta Eggs by @feelgoodfoodie 🍳 A fun way to make scrambled eggs in the oven, and the feta makes it creamy, fluffy and so good!  INGREDIENTS Avocado oil spray 8 ounce block feta cheese 12 eggs 2 tablespoons extra virgin olive oil ¼ teaspoon salt ¼ teaspoon black pepper Fresh mint leaves, for serving Pita bread, for serving INSTRUCTIONS 1. Preheat oven to 400°F. Grease an 8x11 baking dish. 2. Place the feta block in the middle of the prepared baking dish. Crack 12 eggs around the feta cheese. Drizzle the olive oil on top of the feta and eggs. Season the eggs with salt. Season the eggs and feta with the black pepper.  3. Bake in the preheated oven for 18-22 minutes, until the feta cheese melts and the egg whites around the cook. 4. Use a fork to scramble the eggs and feta together. Don’t worry if some of the whites still look wet as they will continue cooking from the heat of the baking dish and surrounding eggs. 5.
