Le Marais bakery owner Patrick Ascaso and Bi-Rite Creamery’s co-owner and pastry chef Kris thought up the Pain Suisse Croissant ice cream flavor as the perfect union between Le Marais’ pastries with rich, flaky layers, and Bi-Rite Creamery’s sweet and creamy classic ice cream. Our Ascaso family has been patrons of the Creamery for years, where our daughter has spent time twirling in front of the ice cream case to the delight of staff. This collaboration is an opportunity to introduce an exquisite new flavor to our guests while honoring the personal relationship between our two passionate culinary businesses. For their Pain Suisse Croissant ice cream, Bi-Rite Creamery blends housemade croissant bits into their classic ice cream with swirls of rich Guittard chocolate that marble velvety vanilla custard, emulating the sweet vanilla pastry cream and chocolate chips of Pain Suisse.
