Dietitian Tip #35: High Protein, High Fiber Loaded Sweet Potato (vegetarian)  RECIPE👇 INGREDIENTS -cooked sweet potatoes -1/4 white onion -1 package steamed lentils from Trader Joe’s (you can obviously make your own, I’m lazy) or you can use ground turkey or ground beef (make sure to cook it fully before serving)  -2 tbsp taco seasoning -juice of 1 lime -pickled jalapeño juice (if you like spice) TOPPINGS: -Salsa creama (1/2 c plain Greek yogurt, 1-2 tbsp salsa, splash of jalapeño juice) -salsa  -guac (avocado, lime juice, onion, cilantro, S&P, scoop of blended cottage cheese) -shredded cheese -hot sauce  HOW TO: -preheat oven to 425F -prep sweet potatoes by washing, drying, piercing with a fork in a couple spots to steam -place on parchment lined baking sheet and bake for 50ish mins (this will depend on the size of your sweet potatoes- the larger they are, the longer they will need) you’ll know they’re done cooking when you can pierce them with a fork all the way through -meanwhile, in a pan sautee onion, once transcleunt add lentils (or raw meat), 1/2 lime juice, splash of jalapeño juice and taco seasoning and combined for a few mins until warmed through (if using meat, cook until meat is done) -once potatoes are done, slice and add lentil mix, desired toppings and enjoy!  #sweetpotato #loadedsweetpotato #tacosweetpotato #sweetpotatorecipe #healthy #healthyrecipes #vegetarian #vegetarianrecipes #highproteinmeals #highproteinvegetarian #vegetarianmeals #highfiber #fiber #lentils
