#strawberrycupcakes #cupcakedecorating #sugarfreelifestyle #lowcarb #lowcarbbaking • Strawberry Filled Cupcakes Chocolate Cupcakes 6 oz cream cheese, softened 1/2 cup butter, softened 3/4 cup granular sweetener 4 eggs, room temp 1/3 cup cocoa powder 2 oz melted keto chocolate chips 1 1/2 cups almond flour 1 1/2 tsp baking powder 1/4 tsp salt Strawberry frosting ½ c butter ½ c keto strawberry jam 2 c powdered sweetener 2 tbsp heavy cream ½ tsp vanilla extract Dye free pink coloring, if desired Make the chocolate cupcakes. Preheat your oven to 350 degrees. Beat butter, cream cheese, & sweetener with mixer. Add eggs one at a time, mixing and scraping the sides of the bowl after each addition. Mix in melted chocolate. Combine dry ingredients in a separate bowl and gradually combine to cream cheese mixture until smooth. Add batter into 12 cupcake liners and bake for 18-20 minutes until a toothpick inserted into the center comes out clean. Make the strawberry frosting. Beat butter until smooth, add in powdered sweetener and mix. Add in strawberry jam, heavy cream, and vanilla and beat until smooth and fluffy. Once cupcakes are cool, use a sharp knife or cupcake corer tool and core cupcakes. Fill cupcakes with frosting, then spread a thin layer on top of each cupcake. Place in freezer 30 minutes Melt 1 cup of sugar free chocolate chips, dip the top of each cupcake into the melted chocolate, set aside to let set. Add Valentine’s Day sprinkles to the tops, if desired. Makes 12 servings
