LUTEAL PHASE CHOCOLATE CAKE Nothing quit like those Luteal phase cravings😅 slow burning carbohydrates like sweet potatoes are great to eat during this phase of our cycle to help curb cravings!🍠 Recipe: -1 cup mashed sweet potato (about 1 large potato or 2 medium potatoes) -1 cup nut butter, I used almond butter -2 eggs -1 tbsp coconut oil (or avocado/olive oil) -2 tbsp maple syrup -2 tsp vanilla -1/2 cup cacao or cocoa powder -1 tsp baking soda -handful of chocolate chips (optional) Ganache Topping -1 cup chocolate chips -1/3 cup coconut cream or milk (cream makes it thicker/creamier if you can find some at your store) How to: -preheat oven to 350F -wash and pierce sweet potatoes with a knife -place potatoes on baking sheet and bake for 50-55min or until potatoes are very soft and baked all the way through -after potatoes are done cooking carefully peel skin off -into a big bowl add mashed potato, almond butter, eggs, oil, vanilla, and maple syrup, stir well to combine -then mix in cacao powder, baking soda, and chocolate chips -line a 8x8 baking dish with parchment paper and evenly pour and spread mixture into dish -bake cake on 350F for 23-25min or until a toothpick comes out clean -remove cake from oven and let cool for a few minutes -for the ganache topping, heat the chocolate chips and coconut cream in a double boiler over low-medium heat, stirring every few minutes -once ganache is ready, quickly pour over cake and spread evenly -enjoy cake right away and store leftovers in an airtight container in fridge up to 4 days, enjoy!
