🫕 Low-Carb Mug Lasagna for One Does anyone else randomly crave lasagna? If so, you’ll love that you can enjoy a single serving portion in a fun to eat mug in just minutes that just happens to be WAAAY lower in carbs & calories! 🙌🏼 My secret is Palmini lasagna noodles! I’ve been using them for years and they are still my favorite! They’re naturally low in calories and carbs because they’re just the vegetable hearts of palm, but they’re sliced thin just like lasagna noodles, and after you boil them they have the same texture as real pasta with a mild, delicious flavor! Just drain, rinse, boil for 10 to 15 minutes, then drain and use in your lasagna! For the mug lasagna I cut my Palmini into squares and strips to fit my mug, then layered the noodles with browned ground beef that I seasoned with garlic & onion powder, salt pepper, & cayenne, low sugar marinara sauce and mozzarella cheese. Once you’ve layered to the top, stick in the microwave 2 to 3 minutes or until hot and bubbly and all of the cheese is melted. If you prefer a browned top you can also do this in the air fryer or stick it under the broiler for a minute to finish. I like mine super cheesy and gooey so I eat it right out of the microwave. There are so many other fun dishes you can make with Palmini lasagna besides just lasagna too, like fun roll ups, you can cut them into strips and make Asian style noodles, cut in squares as a dumpling replacement in chicken soup, the possibilities are endless!
