CHICKEN ZUCCHINI POPPERS 👩🏼🍳 This is a super clean recipe that DELIVERS!! You could meal prep these, make them for game day, or have them for dinner with some veggies! INGREDIENTS: -1 pound ground chicken breast (raw) -2 cups grated zucchini (leave peel on and squeeze out some of the liquid with paper towels) -2 green onions, sliced -3–4 tbsp chopped cilantro -1 tsp minced garlic -1 tsp salt -1/2 tsp black pepper -3/4 tsp ground cumin DIRECTIONS: 1. Preheat oven to 400F and line a baking sheet with parchment paper. Set aside. 2. Grate zucchini and blot with paper towels to squeeze all the excess moisture out. (Don’t skip this- you don’t want it wet!) 3. In a large bowl, mix together chicken, zucchini, green onion, cilantro, garlic, salt, pepper, and cumin. 4. Scoop meatballs onto prepared baking sheet with a small scoop or tablespoon and gently press down with your palm for that “popper shape.” 5. Bake at 400F for 20-25 mins, or until cooked through. 6. Serve with guacamole or yogurt ranch and enjoy!
