I had 3 kids in 3.5 years, 3 c sections and 3 gestational diabetes pregnancies. Each pregnancy I gained over 50 lbs and it became harder and harder to lose the weight. Tastes like chocolate cheesecake, with a smooth mousse-like consistency!  • * feel free to add some sweetener like maple syrup if desired—I thought it was perfect with just the chocolate* 2 cups cottage cheese 1 tsp vanilla 3/4 cup chocolate chips  1/2 tbsp coconut oil 6 tbsp cocoa powder  • 1️⃣Add the cottage cheese and vanilla to a high speed blender. Blend until very smooth. 2️⃣Melt the chocolate. Add the chocolate to a microwave-safe bowl with the coconut oil. Heat in 30 second intervals, mixing after each interval until smooth. 3️⃣Add the cottage cheese and melted chocolate to a mixing bowl, and quickly fold the ingredients together until well mixed. Cookie Dough: •3/4 cup cashew butter •1 tsp vanilla extract •1/4 tsp salt •1/4 cup coconut flour (see recipe notes if using almond or oat flour or cacao powder) •1/4 cup Truvani vanilla protein power •1/3 cup 100% cacao chocolate chips (or Hu Kitchen chocolate gems) Chocolate Shell: •1/2 cup Hu Kitchen chocolate gems •1/2 tbsp coconut oil OR •1/3 cup 100% cacao chocolate chips •1 1/2 tbsp coconut oil •2 tbsp room temperature maple syrup or honey Instructions: 1. Add the cashew butter, vanilla, and salt to a bowl and mix then add in the coconut flour, protein powder, and chocolate and mix until a dough forms. Add more flour if it’s too wet or more cashew butter if it’s too dry. 2. Scoop the dough and roll into balls then place the ball on a tray lined with parchment paper and freeze for 30 minutes. 3. Truffle Ingredients: •3/4 cup plant based chocolate protein powder •3/4 cup natural peanut butter (plus more for coating the truffles) •1/4 cup unsweetened, dairy free milk •4 oz dark or semi-sweet chocolate (I used dairy free & refined sugar free; use sugar free chocolate to keep the recipe sugar free) •2 tsp coconut oil •chopped peanuts (optional) Instructions: 1. Mix together the peanut butter and protein powder in a bowl then add in up to 1/4 cup dairy free milk. If the mixture is too runny, add more protein powder or some cocoa powder. If the mixture is too dry, add more peanut butter. 2. Next, roll the mixture into balls using the palms of your hand and place on a tray lined with parchment paper. 3. Lightly heat some additional peanut butter (I used about 1/4 cup) until it becomes runny then coat each ball in warmed peanut butter. Return the balls to the tray and place in the freezer until frozen, or for at least 6+ hours. 4. Once the balls are frozen, melt the chocolate and coconut oil in the microwave or on the stovetop using the double boiler method. 5.
