Pyaz Paratha (Onion Fried Bread). Savory, crispy goodness that’s ready in minutes.  Makes: 2 servings  Ingredients: Pre knead dough (atta) made with: 1 cup whole wheat flour 1/2 cup bread flour  2 tsp salt  1 cup lukewarm water  Paratha filling: 1 medium red onion, thinly sliced 2 tsp fenugreek leaves  1 tsp garam masala  1 tsp cumin powder  1 tsp coriander powder  1 tsp red chili powder  1 tsp carom seeds  1 tsp salt  Ghee for frying  Raita for dipping Instructions: Knead the dough a night before. You want your atta to be able to rest for best consistency. In a bowl add sliced onions. Then add all the spices. Mix well and while mixing gently crush the onion with your fingers. Set it aside.  Now make a dough ball. With the help of a rolling pin, expand to create a round, 1/8 inch thin dough. Place onion filling on half the dough. Fold the dough in half. Gently press to get rid of an air bubbles. Then place more onion filling on 1/3 of the surface and fold the dough in half. Press gently. Now start flattening the dough with the help of a rolling pin. It’s okay if you can see few onions starts to show on top of the dough. Just make sure you don’t create a hole large enough for the filling to fall off. Now carefully place it on your frying pan. Grease it with ghee beforehand. “Tawa” needs to be hot otherwise the dough will stick to it. Now with the help of rolled up paper towel or potato smasher, press the dough. You want it to get those beautiful golden pockets all around the dough. Flip and repeat the process. Serve immediately.
