Steak Quesadillas are easy to make and so good! INGREDIENTS 1-2 lbs NY sirloin, sliced Olive oil 1/2 tsp each salt and pepper 1 tsp dried cilantro and cumin 2 tsp chili powder 1/4 tsp cayenne 2 peppers, sliced 1 onion, sliced Salt, pepper, and garlic powder Flour tortillas Chihuahua Cheese INSTRUCTIONS Heat a griddle over medium heat. Add the sliced veggies. Season them with a little bit of oil and some salt, pepper, and garlic powder. Once the veggies start to soften, add the sliced steak to the griddle with some oil and season with salt, pepper, dried cilantro, cumin, chili powder, and cayenne. You could use a taco seasoning packet instead of these seasonings if you prefer. Once the steak is cooked how you like it build the quesadillas with the cheese, veggies, and steak. Cook on both sides until golden brown. I like dipping these in sour cream and honey chipotle vinaigrette. Enjoy! Vinaigrette INGREDIENTS 2 Chipotle Peppers 3 TBSP red wine vinegar 2 TBSP honey 1 TBSP minced garlic 1/2 tsp salt, pepper, oregano 1/4 tsp cumin 2/3 cup oil INSTRUCTIONS Combine all ingredients in a food processor except for the oil. Slowly add in the oil a little bit at a time. Blend together until everything is well combined.
