Recipe below! This fast lunch is not only high protein but also quick and easy to prepare.  Use frozen chopped sweet potatoes and pre cooked or shredded chicken to make this a 5 min quick lunch when you are in a rush! Ingredients: - 1 medium sweet potato, peeled and chopped - 4 ounces chicken breast, chopped - 1 ounce Monterey Jack cheese (dairy-free or regular) - 4 ounces Greek yogurt - 1 tablespoon ranch seasoning - 1/2 tablespoon garlic powder - High-fiber gluten-free or regular tortilla - Olive oil spray or a small amount of olive oil (optional) Instructions: 3. Make the Garlic Ranch Sauce:    - In a small bowl, mix the Greek yogurt, ranch seasoning, and garlic powder until well combined. Adjust seasoning to taste if needed. 4. Assemble the Wrap:    - Lay the tortilla flat, and spread a generous layer of the garlic ranch sauce over the surface.     - Add the cooked chicken, sweet potato, and sprinkle the Monterey Jack cheese on top.     - Roll the tortilla tightly, folding in the sides as you go to secure the filling. 5. Toast in the Air Fryer:    - Preheat the air fryer to 390°F (200°C).     - Lightly spray the outside of the wrap with olive oil for added crispiness, if desired.     - Place the wrap in the air fryer basket and toast for 5 minutes, or until golden brown     - Serve with extra garlic ranch sauce for dipping, if desired.
