Ground Turkey Stuffed Bell Peppers 🫑 One of my favorite high protein meals and it’s SO filling Ingredients: 4 bell peppers 1 lb ground turkey (or ground beef / ground chicken / ground Italian sausage) 3 cloves garlic, minced 8.8 oz Spanish rice (I used Ben’s Original Ready Rice in the microwaveable pouch) 1 tbsp olive oil Seasonings: 1 tsp salt, 1/4 tsp pepper, 1/2 tsp paprika, 1/4 tsp crushed red pepper, 1 tsp dried Italian seasoning 1/4 cup water 1/2 cup shredded cheddar cheese (I use reduced fat version) Recipe: 1. Preheat oven to 425 degrees F. 2. Heat a pan on the stove on medium heat with olive oil. Once hot, add in minced garlic. Let cook for 3 minutes, or until fragrant. 3. Add ground turkey to the pan and use a spatula to break apart into smaller bits. 4. Heat rice in the pouch. Remove from microwave once cooked. 5. Once it’s fully cooked and browned, add in seasoning and stir. Add in 1/4 cup water and the cooked rice and mix around until evenly dispersed. 6. Turn off the heat to the pan. 7. Spray an oven safe pan. Add in chopped bell peppers (chop off the tops of the bell peppers and remove the insides and seeds). Fill bell peppers with meat and rice mixture. 8. Put into the oven for 25 minutes. 9. Remove from the oven. Turn the oven to a broil. Sprinkle the top of each bell pepper with cheese. Add into the oven on broil for 2-3 minutes, being careful that it doesn’t burn. 10. Remove from the oven and enjoy!
