My Ricotta Gnocchi recipe! Truly one of my favorite dishes ever! Restaurant quality yet SO easy and fun to make! Recipe⬇️ GNOCCHI RECIPE 1 cup flour 2 cup ricotta 3/4 cup grated Parmesan 3 egg yolks 1 tsp salt 1/2 tsp pepper STEPS 1. Line a plate with a paper towel and spread out ricotta cheese onto it. Place another paper towel on top and gently press down to absorb excess moisture (can also use a cheese cloth to remove moisture) 2. Mix ricotta and egg yolks in a bowl until smooth. Then add flour, parm, salt and pepper. Mix well then use hands to form into a dough. 3. Flour your surface or cutting board and shape dough into a 8 inch disc. Cut into 8 equal slices. Roll each slice into long logs then cut into 1 inch bite size gnocchi pillows 4. Boil in salted water for 3-4 minutes or until gnocchis start to float to top. Add immediately to sauce of choice and serve. CREAMY RED SAUCE 2 tbs butter 1 tbs olive oil 1 diced shallot 4-5 cloves minced garlic 2 large tbs tomato paste 1 tsp chili flakes 1/3 cup white wine 1.5-2 cups heavy whipping cream 1/2 cup grated Parmesan 1 tsp salt 1/2 tsp pepper 1/2 tsp chicken bouillon (optional) STEPS 1. Melt butter and olive oil in a pan and saute shallots and garlic until fragrant. Mix in tomato paste and chili flakes and sauté for 1-2 minutes. Pour in white wine and saute until it reduces (allow at least half of wine mixture to evaporate). 2. Pour in whipping cream and bring to a light simmer. Once it starts to thicken, season with seasonings and Parmesan. 3. Then serve with your favorite pasta ❤️🔥
