Avocado and Lentil Kale Salad w/ Miso Dressing Ingredients: •½ cup cooked lentils (cooked in bone broth for extra protein) •1 head curly kale, de-stemmed and chopped •1 avocado, diced For the Miso Dressing: •½ cup extra virgin olive oil  •1 tbsp miso paste •2 ½ tbsp nutritional yeast •1 garlic clove, minced •1 tsp dijon mustard •Tiny pinch of salt Instructions: 1. Cook the Lentils – Prepare lentils according to package instructions, using bone broth instead of water for extra protein. Once cooked, let cool slightly. 2. Make the Dressing – In a small bowl or jar, whisk together the olive oil, miso paste, nutritional yeast, minced garlic, and Dijon mustard. Add salt only if needed! 3. Massage the Kale – In a large bowl, add the chopped kale and miso dressing. Use your hands to massage the kale for about a minute until it softens. 4. Assemble the Salad – Add the cooked lentils and diced avocado to the kale. Place in fridge to chill until ready to eat! ♥️💐Chocolate Date Hearts🍫🎀 A naturally sweet, fiber-rich Valentine’s treat! Ingredients: •3 cups pitted dates (if hard, soak in water for 5-10 minutes) •2 cup unsweetened shredded coconut  •2 dark chocolate bars •1 tsp coconut oil •½ cup white chocolate •1 tsp coconut oil •Crushed freeze-dried strawberries Instructions: 1. Toast the Coconut     -Preheat oven to 350°F      -Spread shredded coconut on a lined baking sheet.     -Bake for 3–5 minutes, watching closely to prevent burning. Set aside. 2. Make the Date Base (Jazz it up w/ chia seeds, cashews, etc!)     -In a food processor, blend dates and toasted coconut until a sticky, paste-like texture forms. Scrape down the sides as needed. 3. Fill the Molds:     -Press the date mixture into heart-shaped silicone molds, filling ¾ of the way up to leave space for chocolate. Smooth the tops. 4. Melt the Dark Chocolate:     -Add dark chocolate and 1 tsp coconut oil to a microwave-safe bowl.     -Microwave in 30-second intervals, stirring between each, until fully melted.  5. Assemble & Set:     -Pour melted dark chocolate over the date mixture, filling the molds to the top.     -Let sit at room temperature or in the fridge until set. 6. Melt the White Chocolate:     -Add white chocolate and 1 tsp coconut oil to a bowl.     -Microwave in 20 second intervals, stirring well, until smooth. 7. Decorate & Finish:     -Drizzle white chocolate over the hardened dark chocolate.     -Sprinkle with crushed freeze-dried strawberries before the drizzle sets.     -Chill in the fridge for 15 minutes until fully set. 8. Enjoy & Store:     -Remove from molds and enjoy! Store in an airtight container in the fridge for up to one week.
