Soak dried shiitake mushrooms in the warm water. This is optional but it adds lots of umami flavor! If you decide not to do this, substitute with fresh mushrooms or a different vegetable 2. Squeeze shiitake mushrooms to remove any liquid, The remaining liquid will be our “dashi.”Add extra water to bring the amount of mushroom “dashi” to 1 cup + 2 tbsps 3. Slice the rehydrated shiitake mushrooms or fresh mushrooms if you skipped steps 1-2. 4. Wash rice and add the mushroom “dashi” or water if {again} the above steps were skipped to the rice 5. Slice the Chinese sausage. 6. Add the mushrooms, peas + carrots, and sausage on top of the rice. Do not stir. 7. Combine the soy sauce, oyster sauce, sesame oil, and mushroom seasoning powder. Poor onto of the ingredients. 8. Cook 9.
