Happy New Year! 🎊 I am back from vacation with a surprise! 😳 I am relaunching my popular Cookin’ in Rice Cooker series which I know so many of you love! The past few months I have been remastering my old recipes and testing new ones, so I hope you’ll follow along! ❤️ For those of you who may be new, the series was born out of my experiences as a low income student in college who missed Vietnamese food (Asian food in general tbh). Most of the dorms I lived in didn’t have kitchens, but at the time we were allowed to have rice cookers! My tiny cheap rice cooker paired with some budget shopping hacks made it possible for me to cook the foods I missed every once in a while, so I hope it resonates with current students missing home cooked meals as well 🥹 #cookininricecooker #ricecooker #tinyricecooker #ricecookerrecipes #ricecookerhacks #smallkitchencooking #dormcooking #collegecooking
🍲 EP 4. Hot Pot for one..or two! This one isn’t a recipe since I use a hot pot soup base! Just pick out your favorite hot pot soup base and mix together your got to sauce! 🍲 I do recommend flipping between cook to warm once the soup boils. This way you don’t overheat the rice cooker quickly. For example, if I were to just leave the switch on cook after the soup boils, it will switch to warm automatically at some point. The rice cooker detects its too hot. Afterwards, the pot has to cool down before you can switch it to cook again. You can also just cook all your ingredients at once too! #hotpot #ricecooker #ricecookerrecipe #cookininricecooker #smallkitchencooking #dormcooking #cookinghack #asianfood #chinesefood #ricecookerhack #collegecooking #livingalonecooking

🥚 EP 7. Egg drop soup was one of the first rice cooker videos of mine to go viral! But thats not why that video lives in my head rent free…It was also a video I made a voiceover mistake in by wrongly relaying how much salt I put in based on retracing my steps and watching my raw footage 😭 So naturally, I panicked when I got an influx of comments mentioning how salty it was, and I felt so bad. Now, I make sure to write things down as I go haha🥚 My rice cooker is a 2 cups cooked / 4 cups uncooked size. Ingredients 2 cups chicken stock 2 eggs 1 tbsp corn starch, use less for thinner soup 2 tbsp water 1/2 tsp soy sauce 1/4 tsp salt 1/4 tsp white pepper Green onions Turmeric powder or yellow food coloring (optional for color) 1. Add the chicken stock to the pot and hit cook 2. Combine corn starch, water, and turmeric powder 3. Add the cornstarch mixture/slurry to the the chicken stock once it boils 4. Beat 2 eggs and drizzle into the soup once it comes back up to a boil. Stir the soup while you drizzle slowly to get nice ribbons! 5. Add soy sauce, salt, and white pepper 6. Top with green onions and adjust seasoning to taste! #eggdropsoup #eggflowersoup #chinesefood #ricecooker #ricecookerrecipe #cookininricecooker #smallkitchencooking #dormcooking #cookinghack #asianfood #chinesefood #ricecookerhack #collegecooking #livingalonecooking
EP 3. Miso Soup! Freshman year I kept a bunch of instant miso soup packets in my desk, and I would use a coffee maker to boil water and make soup haha. Then when I started experimenting with cooking in my rice cooker..I realized I could easily make miso soup with fresh ingredients instead! The instant stuff is super handy though and tastes great : ) Ingredients 2 cups water 1/2 tsp dashi powder 1/2 tbsp wakame seaweed 5 oz soft tofu, cubed 1-2 tbsp miso paste (start out with 1 and add more to preference) 1. Place water, dashi powder, seaweed, and tofu into the pot. Place the lid on top and hit cook. 2. Once the soup comes up to a boil, flip the switch to warm. We do this because high temperatures can not only affect the taste of miso negatively but also affect the nutritional benefits! 3. Dissolve the miso paste carefully using a strainer. 4. Adjust seasoning to taste: adding more miso, some soy sauce, or salt. #ricecooker #misosoup #japanesefood #ricecookerrecipe #cookininricecooker #smallkitchencooking #dormcooking #cookinghack #asianfood #chinesefood #ricecookerhack #collegecooking #livingalonecooking

🍅🍳 EP 1. Tomato Eggs was one of my first rice cooker videos ever, so I thought it’d make sense for it to be the first episode of Cookin’ in Rice Cooker: Remastered edition! 🍅🍳 As usual the water to rice ratio may differ depending on the kind of rice you use! Ingredients 3/4 cup jasmine rice 1 cup water (I actually used slightly less than 1 cup) 1 tbsp soy sauce 1 tbsp mirin 1 tbsp shaoxing wine or sake 1 small tomato 1-2 eggs 1. After washing the rice, add the water, soy sauce, mirin, and shaoxing wine. Stir. 2. Score a shallow x on the tomato. Place in the center of the rice. Hit Cook. 3. After 20-25 minutes of cooking, drizzle the beaten egg over the rice. Place the lid back on top and let finish cooking 4. Mix everything together and adjust the seasonings to taste. I like to add Golden Mountain seasoning sauce and sesame oil! #tomatoegg #tomatoeggs #ricecooker #ricecookerrecipe #cookininricecooker #smallkitchencooking #dormcooking #cookinghack #asianfood #chinesefood #ricecookerhack #tomatoeggstirfry
EP 2. Chinese Sausage Rice. Growing up, my mom would toss Chinese sausage and some veggies into the rice cooker for a quick yet yummy meal. This is a classic rice cooker hack for many Asian families! As usual the water to rice ratio may differ depending on the kind of rice you use! Cooking times may also differ depending on your rice cooker brand/model. Ingredients 3/4 cup jasmine rice 1 cup + 2 tbsp warm water 4-5 dried shiitake mushrooms 1 Chinese sausage link 1/2 cup frozen peas and carrots 1 tbsp soy sauce 1 tbsp oyster sauce 1/2 tbsp sesame oil 1/4 tsp mushroom seasoning powder 1. Soak dried shiitake mushrooms in the warm water. This is optional but it adds lots of umami flavor! If you decide not to do this, substitute with fresh mushrooms or a different vegetable 2. Squeeze shiitake mushrooms to remove any liquid, The remaining liquid will be our “dashi.”Add extra water to bring the amount of mushroom “dashi” to 1 cup + 2 tbsps 3. Slice the rehydrated shiitake mushrooms or fresh mushrooms if you skipped steps 1-2. 4. Wash rice and add the mushroom “dashi” or water if {again} the above steps were skipped to the rice 5. Slice the Chinese sausage. 6. Add the mushrooms, peas + carrots, and sausage on top of the rice. Do not stir. 7. Combine the soy sauce, oyster sauce, sesame oil, and mushroom seasoning powder. Poor onto of the ingredients. 8. Cook 9. Mix everything together once done cooking #chinesesausagerice #sausagerice #chinesesausage #ricecooker #ricecookerrecipe #cookininricecooker #smallkitchencooking #dormcooking #cookinghack #asianfood #chinesefood #ricecookerhack #collegecooking #livingalonecooking

Caption less…EP 9. This gochujang pasta was one of my most popular rice cooker recipes from last year! 🍝 My rice cooker is a 2 cups uncooked / 4 cups cooked size. Ingredients 4oz pasta 1/3-1/2 cup pasta water As much garlic as your heart desires, minced 1 tbsp gochujang 1/2 cup heavy cream 2 tbsp parmesan cheese + more for topping parsely, chopped salt and pepper, to taste 4oz chicken (optional) *see notes* 1. Cook pasta and reserve pasta water 2. Saute minced garlic and gochujang. If using a rice cooker like mine, you’ll need to put the lid back on in order to set it to cook. 3. Add heavy cream and parmesan. Again, if similar model to mine, put the lid on and you’ll probably need to hit cook again. Salt and pepper to taste. 4. Occasionally stir till sauce begins to reduce 5. Add pasta and slowly stir in pasta water till sauce thickens and binds to the pasta 6. Top with parmesan and parsley! NOTES! In the original video I made for this, I did not use chicken. If you want to make it with chicken in a rice cooker like this current video shows, add the chicken to the pot along with the garlic. Saute till the chicken is no longer pink, then add the gochujang! Because the chicken’s weight will keep the trigger of the rice cooker depressed, you probably won’t need to hit cook again in step 3. It should stay on cook! #gochujangpasta #creamygochujangpasta #pasta #gochujang #koreanfood #koreanfusion #ricecooker #ricecookerrecipe #cookininricecooker #smallkitchencooking #dormcooking #cookinghack #asianfood #ricecookerhack #collegecooking #livingalonecooking
