SOPITA DE FIDEO🍲 Growing up sopita de fideo was a staple in my household. It was the ultimate comfort food and it’s super easy to prep! Here is my own little spin that is loaded with all the flavor and nourishing ingredients. Sopita de Fideo: 7 oz package fideo pasta 1/4 cup avocado oil 6-7 cups chicken bone broth 1-2 cups water 3 large roma tomatoes 1 jalapeño deseedeed 1 cup organic tomato sauce 1/2 tsp cumin Salt and pepper to taste 1 small yellow onion 7 garlic cloves 1/4 cup cilantro + more for garnish Avocado oil spray 1 lb boneless skinless chicken thighs Instructions: 1. Add roma tomatoes, 1/2 of the small yellow onion roughly chopped, jalapeño deseeded, 5 large garlic cloves in skins, to air fryer dish, and spray with avocado oil spray air fry 400 F for 20 minutes, shaking half way through 2. Once veggies are done air frying, carefully transfer to blender, make sure to squeeze out garlic out of skins, add 1/4 cup fresh cilantro, and blend until smooth 3. To a medium pot on medium high heat add 1/4 cup oil and warm through 4. Add the fideo pasta and sauté for 3-5 minutes, stirring throughout 5. Once the pasta starts to turn a light golden color, add the other half of the onion diced, and sauté another few minutes, stirring throughout 6. Once your pasta is a golden brown color, add 2 minced garlic cloves, sauté a minute 7. Add in the tomato sauce, roasted salsa and sauté a couple minutes 8. Add chicken bone broth and water, turn up heat, and bring to a boil 9. Once boiling, add chicken thighs, cover pot, and simmer for 20-25 minutes or until chicken is cooked 10. Take out chicken, shred, return back to pot, and mix 11. ZUPPA TOSCANA SOUP If you love Olive Gardens Zuppa Toscana soup, you are going to fall in love with this copy cat version. Made with nourishing ingredients that will leave you satisfied. Zuppa Toscano soup: 33.8 fl oz chicken bone broth 1 cup raw cream (substitute coconut cream for DF version or any cream you like) 4-5 small red potatoes chopped 1 cup chopped kale 1 tsp Italian seasoning 1/2 cup diced yellow onion 7 bacon slices  1 lb mild or spicy Italian sausage 4 garlic cloves minced 2 Tbsp tapioca flour (or any flour you have) Instructions: 1. To a large pot on medium heat cook your Italian sausage until no longer pink and set aside 2. To same pot add diced bacon and cook until cooked through and set aside  3. Add diced onions and sauté 5-7 minutes or until onions get translucent and caramelized 4. Add minced garlic, seasoning, flour and sauté a minute  5. Add bone broth, chopped potatoes, cooked bacon, cooked sausage, cream, and bring to a boil 6. Then cover and simmer for 15-20 minutes or until the potatoes are fork tender 7. Add in chopped kale, mix, and let the kale cook a couple minutes 8.
