FROM A CLINICAL NUTRITION GRADUATE💗 TACO BOWL WITH GUT-HEALTHY CITRUS CILANTRO CREMA🌿 ⭐️Make this delicious balanced Mexican taco bowl with ingredients that will leave you feeling energized and full until your next meal. ⭐️I used 93% lean pasture raised beef because it contains more anti-inflammatory omega-3‘s than conventional, and gut-healthy citrus cilantro crema packed with probiotics to help balance the gut microbiome. 🌮TACO BELL GROUND BEEF COPYCAT 1 lb 93% lean pasture-raised ground beef 2 tbsp avocado oil 1/4 cup water 3 tbsp tomato sauce SAUCE 2 tbsp taco seasoning (use mild if you have a sensitive gut) - add more, to taste 1 tsp tapioca starch or arrowroot powder Optional: 1/4 tsp turmeric (for anti-inflammatory boost) MAKE IT Heat the avocado oil over medium heat, in a medium pan Add the ground beef and cook, breaking it up with a wooden spoon. Cook until browned, about 5–7 minutes. In a small bowl, combine all of the following into a “Taco Bell” sauce: taco seasoning, tapioca starch, and ¼ c water. Once the beef has browned, add the tomato sauce. Stir well to coat the beef evenly. Add the “Taco Bell” sauce to the browned beef and simmer for 3 minutes, stirring often so it doesn’t stick. Remove from heat, and taste and adjust seasonings. Store leftovers in an airtight container in the refrigerator for up to 3 days. 🌿CITRUS CILANTRO CREMA - (blend in a food processor, then place in refrigerator x 2 hours to thicken) 2 drizzles extra virgin olive oil ½ lime ½ lemon Generous handful of cilantro (stems included)-finely chopped ½ jalapeño, deseeded/membranes removed if don’t want spice and ½-1 jalapeno with seeds if you do want 🔥) Sea salt, to taste ½ tsp garlic powder + ⅛ tsp 1/2 tsp onion powder + ⅛ tsp 2 tbsp plain probiotic coconut yogurt or Greek, if tolerated 2 tbsp avocado oil mayo (make your own or use store bought) - I used pasture-raised eggs to make mine (lmk if you want the recipe)
