This winter weather has me wanting all the soup and this sausage, butternut squash & kale soup is one of my favorites! It's filled with healthy ingredients and only takes about 30 minutes! 😊🍲 I had to swap a couple of my usual ingredients so feel free to make with either option! Ingredients: -16 oz of sausage -3 cups of cubed butternut squash -1 onion diced -2 carrots peeled & diced -4 cloves of garlic -olive oil -salt & pepper -itailian seasoning -1 can of cannellini beans (I use garbanzo here) -1 can of diced tomatoes (I use 2 fresh roma tomatoes here) -5 cups of chicken or vegetable broth -4 cups of chopped kale with stems removed & massage Optional: shredded parmesan cheese & crackers Steps: 1. Add oil and sausage to large pot on medium heat, breaking up sausage and stirring occasionally letting cook for 6-8 minutes until sausage is mostly brown 2. Add onions, carrots, & butternut squash seasoning with salt, pepper, & itailian seasoning letting cook for 3-4 minutes and then adding garlic. Cook for another 4-5 minutes covered until onions start to appear translucent 3. Add dice tomatoes, beans, and broth and bring to boil then turn heat down and cover letting simmer for 15 minutes 4. Add kale after 15 minutes, more salt & pepper, 1 tbsp olive oil and let cook for another 3 minutes 5. Serve with parmesan cheese and crackers as garnish Enjoy!!
