Recipe--> 🍲🥫✨ It snowed for three days straight, so a big pot of soup was on my mind 😌  This Tuscan white bean soup is a comfort healthy dinner that will warm you right up. Best part is you will have lots of leftovers (trust me you're going to want them)!  Can also be made vegetarian by doubling the beans and omitting the chicken!  Ingredients: -olive oil -1 white onion diced -6 cloves of garlic finely chopped -3 carrots diced -4 c cooked chicken (I used rotisserie for convenience!) -14oz can of cannellinni beans -14oz can diced seasoned tomatoes -32 oz low sodium chicken broth -2 c water -2 c brown quick rice (if using different rice, you will need to cook soup longer) -4 c kale de-stemmed and chopped -salt & pepper -1 bay leaf -Itailian seasoning  optional: -shredded parm  -crackers Steps: 1. In a large pot with 2 tbsp olive oil, add onions, garlic, & carrots and season with Italian seasoning, salt & pepper. Cook for 3-4 minutes stirring regularly until onions start to become translucent. 2. Add beans, diced tomatoes, chicken, bay leaf, broth & water and bring to boil 3. Once boiling, add rice and lower heat to simmer. Let cook for 10 minutes 4. After 10 minutes, add kale and let cook for another 3-4 minutes  5. This winter weather has me wanting all the soup and this sausage, butternut squash & kale soup is one of my favorites! It's filled with healthy ingredients and only takes about 30 minutes! 😊🍲 I had to swap a couple of my usual ingredients so feel free to make with either option! Ingredients: -16 oz of sausage -3 cups of cubed butternut squash -1 onion diced -2 carrots peeled & diced  -4 cloves of garlic -olive oil -salt & pepper -itailian seasoning -1 can of cannellini beans (I use garbanzo here) -1 can of diced tomatoes (I use 2 fresh roma tomatoes here) -5 cups of chicken or vegetable broth -4 cups of chopped kale with stems removed & massage Optional: shredded parmesan cheese & crackers Steps: 1. Add oil and sausage to large pot on medium heat, breaking up sausage and stirring occasionally letting cook for 6-8 minutes until sausage is mostly brown 2. Add onions, carrots, & butternut squash seasoning with salt, pepper, & itailian seasoning letting cook for 3-4 minutes and then adding garlic. Cook for another 4-5 minutes covered until onions start to appear translucent 3. Add dice tomatoes, beans, and broth and bring to boil then turn heat down and cover letting simmer for 15 minutes 4. Add kale after 15 minutes, more salt & pepper, 1 tbsp olive oil and let cook for another 3 minutes 5. 2 cups butternut squash cubed
1 yellow onion cut in chunks
3 carrots peeled and chopped
6 cloves garlic peeled
1/4 cup olive oil
salt and pepper
2 tablespoons vegan butter
1 tablespoon fresh thyme chopped
1 tablespoon fresh sage chopped

Vegan Lasagna Soup takes all of your favorite flavors of lasagna and puts them in one pot. It is easier to cook without losing any of those comfort food vibes.
