▪️4 hojas de laurel  ▪️2 Ramas de romero  • PARA RELLENAR  ▪️8 ajos en mitades ▪️50gr de uvas pasas ▪️100gr de aceitunas ▪️100gr de alcaparras (Otras opciones: Tocineta, pimientones, chiles, cebolla, ciruelas pasas, manzana, pera, chorizo, nueces, quesos madurados.) • TRUCOS DE LA ABUELA 👵🏻  * Hornea el pernil a 160 °C, completamente cubierto con papel aluminio, durante 4 horas. Durante este tiempo, báñalo con el marinado cada 20 a 30 minutos para mantenerlo jugoso. Pasado este tiempo, retira el papel aluminio, sube la temperatura del horno a 250 °C y hornea hasta que quede dorado por fuera. • * Coloca el pernil en una bandeja profunda que pueda recoger los jugos que va soltando durante la cocción. Para que te quede mejor, ponlo sobre una parrilla dentro de la bandeja. Pernil sauce recipe 😍 salsa para pernil!  After making my pernil I realized I couldn’t let all the delicious juices go to waste. It has so much flavor so I decided to make a sauce with it.  The sauce looks similar to Dominican wasakaka (guasacaca) sauce but it’s made differently.  Ingredients: - Pernil juices  - The juice of 2 limes  - 1 tablespoon of white vinegar  - 1 teaspoon of salt (or more) - 1 teaspoon of black pepper  - 1 teaspoon of oregano  - 4 garlic cloves  - 1/3 of fresh cilantro  Instructions: After you uncover the pernil (right before you take it out of the oven to make the skin crispy) reverse some of the juices.  In a bottle combine the juices with lime, vinegar, salt, black pepper, dry oregano, minced garlic cloves, and fresh cilantro. Shake very well and let it sit there until you take the pernil out of the oven. Then serve on top of your pernil 😍 Pork and citrus paid so good together so this is the perfect sauce for your pernil this upcoming holiday.  #pernil #saucerecipe #salsa

Items: - [x] Bone-in Pork shoulder with skin: 10 pounds  - [x] Avocado Oil: taste  - [x] Sofrito: 16 oz.  - [x] Fresh Garlic: one bulb  - [x] Bitter Orange Juice Marinade & Water: 1 cup - [x] Water: 1 cup - [x] Achiote Oil: for basting  - [x] Certified Sazón Seasoning Blend  - [x] Oregano: to taste  - [x] Cumin: to taste  - [x] Gravity Fed 989 Charcoal Grill/Smoker - [x] Lump Charcoal: full hoper  - [x] Fire starters: 2 Marinade Prep & Cooking Instructions: * Rinsed and pat dried the pork shoulder off camera  * Scored the fat cap diagonally * Studded the pork with the Garlic cloves.  * Lathered all sides with avocado oil * Seasoned all sides with oregano, garlic powder, Certified Sazón Blend and cumin to taste * Then added the Sofrito mixture on all sides with a tad more seasonings * Covered with foil and placed in the fridge overnight * Next day fired up the Gravity Fed 980 with lump charcoal to 300° * Took the pernil out the fridge, removed the foil wiped off the sofrito with a paper towel * Removed the pernil from the tub and placed on in a foil pan on top of a baking rack * Added the Bitter Orange Juice Marinade & water: combined and poured into the pan along with some garlic cloves  * Placed the pernil into the grill and roasted at 300° for 3 hours then bumped up the heat to 400°. Cooked for an additional 2 hours to internal temp 209°                                *Checked on the pork shoulder every 40 mins and basted with achiote oil and rotated.  * Rested for 30 mins * Served the pernil with the crunchy crispy skin, arroz con gandules, tostones & salad.  #fyp #Recipe #pernil #puertoricanfood

Ingredients: 	•	Pork shoulder (pernil) 	•	Garlic 	•	Dominican oregano 	•	Salt 	•	Black pepper 	•	Adobo 	•	Paprika 	•	Sofrito 	•	Olive oil 	•	Lime Instructions: 	•	Separate the skin from the pernil and poke holes all over. Clean the pernil with lime, vinegar, and water. 	•	In a pilón, mash lots of garlic and Dominican oregano. In a bowl, mix the garlic and oregano with salt, black pepper, adobo, paprika, sofrito, and olive oil. 	•	Rub this marinade all over the pernil, making sure to season inside the holes. Pat the skin dry and sprinkle with salt. 	•	Let it marinate for 24 hours. Before baking, uncover the pernil, pat the skin dry again, and cover it with aluminum foil. Bake at 330°F for 3 hours, then remove the foil and bake at 450°F for 1 hour to crisp up the skin. 	•	Serve with arroz con guandules, pastelón, avocado, and a delicious sauce to pour on top. Pernil (para Diciembre)  𝗣𝗮𝗿𝗮 𝗲𝗹 𝗺𝗮𝗿𝗶𝗻𝗮𝗱𝗼 - 2 Cdas Salsa Inglesa - 1 Cebolla - 1 Cabeza de Ajo - ½ Taza Vinagre de Manzana - 1 ½ Taza Jugo de Naranja - 2 Cdas Azúcar Morena - 1 Cda Orégano - ¼ Taza Aceite de Oliva - Sal al gusto 𝗣𝗮𝗿𝗮 𝗵𝗼𝗿𝗻𝗲𝗮𝗿: - Paleta de Cerdo aprox. 8 libras(3.5 Kilos) -4 Cebollas Grandes  -Adobo, Tomillo y Romero al gusto  1. Con un cuchillo perfora el Pernil. 2. Licua todos los ingredientes del marinado.  3. Coloca el pernil en una bolsa junto con el marinado y refrigera de 12 a 24 horas.  4. Corta Cebollas en aros y coloca en una bandeja junto con el pernil y los jugos del marinado.  5. Sazona con Adobo, Tomillo y Romero por todos sus lados. 6.
