This shrimp salad will make a great quick meal or appetizer especially this New Yearโs Eve. You can elevate by serving on top of endive leaves. You will need: 1/2 pound shrimp deveined and tails removed Approximately 12 large pieces 1 1/2 fresh lemons 2-3 tbsp mayonnaise 1 celery stalk diced finely 2 tbsp fresh parsley finely chopped 1 spring onion finely sliced 1/2 tsp dry tarragon/ you can use fresh 1/2 tsp celery seeds 2 tsp hot sauce 1/2 tsp paprika Salt and black pepper to taste Preparation: Bring water to a boil, add the shrimp with 1/2 lemon. Let it boil for 2-3 minutes. Remove, drain, add ice and let it cool completely. Chop the celery, parsley and spring onion. Place in a bowl and add the tarragon, celery seeds, mayonnaise, hot sauce, paprika, salt and pepper and the juice of 1 lemon. Mix well the add the shrimp after good rough chop. Arrange a good amount inside and endive lettuce. Garnish with more parsley and serve. So, so good. . .
