SUPER BOWL COWBOY QUESO🤠🧀 This appetizer is always a must for the big game! The extra addition of corn, beans, beef, etc. is the ultimate upgrade! INGREDIENTS: -1 lb ground beef (I used lean 96/4 and flavored with cumin, salt, and pepper) -32 oz Velveeta cheese

SUPER BOWL SMOKED QUESO 🧀♨️ This is my favorite dip recipe I’ve made so far! You gotta try this for Super Bowl Sunday! INGREDIENTS: -9x13 aluminum pan -2 lb Velveeta cheese, cubed -2 lb breakfast sausage, cooked and crumbled -1 (8 oz) bag shredded Mexican cheese blend -2 (10-oz) cans diced tomatoes and green chiles, undrained -1 cup pickled jalapeño slices -2 tbsp minced garlic  -1/4 cup yellow onion DIRECTIONS: -Cook and crumble sausage. -Place all ingredients in a 9×13 inch disposable aluminum pan.

If you’re in the mood for something a little different than a classic onion dip for your game day party this year, mommy has you covered. Charred Scallion and Jalapeño Dip Ingredients: - 6 scallions, cut in half  - 2 jalapeños, cut in half  - 2 tsp neutral oil  - 16oz sour cream or full fat Greek yogurt  - 8oz cream cheese, softened  - Zest of 1 lemon  - Juice of 1 lemon  - 2 tsp Worcestershire sauce - 3 garlic cloves, minced  - 1/4 cup chopped parsley  - 3 Tbsp chopped dill  - 3 Tbsp chopped chives  - Salt and pepper to taste  Instructions: Preheat a skillet over medium high heat for several minutes until it is very hot. Add the oil and place the jalapeños and scallions in the pan. Allow them to get very browned and charred on both sides, about 7-9 minutes. The scallions will be done before the jalapeños, so remove those first. Remove from the heat and set aside to cool. When they are cool enough to handle, chop the charred scallions and jalapeños until they are the consistency of a thick, textured paste.  In a mixing bowl, add the cream cheese and sour cream and paddle together with a rubber spatula to combine. You can also assemble the dip in a blender or food processor if that’s easier. Add the lemon zest and juice, Worcestershire sauce, minced garlic, herbs and chopped scallions and jalapeños. Stir to combine, then cover with plastic and chill for at least an hour. not really a football fan, but definitely a fan of these twice baked buffalo chicken potatoes 🏈🔥 make something a little more exciting than chips and salsa for your super bowl sunday plans!! think buffalo chicken dip mixed with mashed potatoes… stuffed into a baked potato!!!  and you can definitely use dairy-free substitutes for this one if you’re DF ✨  here’s everything you need: -5-6 medium russet potatoes, cleaned -1-2 tablespoons olive oil -kosher salt and black pepper to taste -1 lb chicken breast, fully cooked (or shredded rotisserie chicken) (see recipe notes) -3⁄4 cup buffalo sauce -2 tablespoons butter, melted, divided -1⁄3 cup sour cream, plus additional for topping -1⁄3 cup whole milk -1⁄2 cup shredded cheddar cheese -2 teaspoons garlic powder -2 tablespoons chives, finely chopped Preheat the oven to 400F. Place a wire rack on a sheet pan, if you don’t have a wire rack, just a sheet pan will work fine. Prick each potato 3 to 4 times with a fork. Over each potato, drizzle olive oil and a pinch of salt and ground black pepper. Place the potatoes on the wire rack and bake until the potatoes are tender to a fork, 50 to 60 minutes. After the potatoes are done, remove from the oven and cool on the sheet pan until cooled to the touch, about 15 minutes. While the potatoes are baking, add the cooked chicken breast to a large bowl and shred using two forks or an electric mixer (see recipe note below). Add the buffalo sauce and 1 tablespoon of melted butter and toss to combine. Season to taste with salt and pepper and set aside. Once the potatoes have cooled, carefully slice about 1/2 inch off across the top of each potato (see video for demo) and scoop out most of the insides into a large mixing bowl, leaving just enough so they can be refilled and not lose their structure. Add the sour cream, milk, cheddar cheese, garlic powder, and 1 tablespoon of melted butter to the mixing bowl. Mash to combine all of the ingredients, then season to taste with salt and ground black pepper. Fold in the buffalo chicken. Fill each of the hollowed potatoes to the very top with the mixture (you’re likely going to have some extra filling). Place the stuffed potatoes back on the wire rack and bake until the filling begins to crisp, about 15 minutes. Remove from the oven and top with sour cream and chives. Full recipe below and it’ll be in an upcoming edition of the newsletter. 🏈 Irish Nachos  - 5 Yukon gold potatoes, sliced thin  - Avocado oil  - Salt and pepper to taste  - 1 tsp garlic powder  - 1 tsp onion powder  - 2 cups shredded cheese Toppings of your choice, such as:  - chopped cooked bacon  - Sliced jalapeños  - Sour cream  - Chives  - Scallions  - Etc etc etc  Preheat the oven to 425 degrees. Using a mandolin or a sharp knife, slice the potatoes very thin, about 1/8 to 1/4 inch. Toss the potato slices with avocado oil, salt, pepper, onion powder and garlic powder. Grease a large baking sheet with more oil and arrange the sliced potatoes in a single layer. You may need more than one baking sheet.  Roast the potatoes for about 10-15 minutes, then flip and return to the oven for another 10-15 minutes. Not all ovens cook the same, so some potatoes may be done before you need to flip them, and you may need to rearrange the potatoes on your baking sheet to ensure even browning. Potatoes in the center may need to be moved to the outer edge of the baking sheet. The biggest thing to remember is that you want them to be crisp and golden brown on both sides.  When the potatoes are done roasting, sprinkle them with salt and arrange in a big pile on a parchment lined baking sheet. Top with cheese and bacon and return to the oven at 350 degrees until the cheese is melted, about 10-12 minutes. Here’s a simple recipe for mozzarella-stuffed Pillsbury dough shaped like a football for your Super Bowl Party Preheat your oven as per the instructions on the @pillsbury dough. Prepare the dough and make sure you lay it out flat. I used @tillamook mozzarella cheese cut into squares. Roll the dough around the cheese and roll into a ball.  Place on your baking sheet in the shape of a football. Brush with an egg wash and bake. Once it’s ready, brush again with a butter, parsley and Parmesan cheese mixtures. Add salt,m to your tasting.  For the laces I used mozzarella string cheese. Italian Sub Pinwheels!🏈 These little bites are so good!!!! Also, super easy and cute for game day!!  Ingredients:  8 oz cream cheese  1/4 cup banana peppers 1/4 cup roasted red peppers  1 tablespoon Italian seasoning  5 burrito-size tortillas  1 lb sliced salami 1 lb pepperoni 1 lb ham  1 lb provolone cheese  shredded lettuce  Directions:  1. In a medium bowl add the cream cheese, banana peppers, red peppers, and Italian seasoning. Mix until combined and decently smooth.  2. Spread a few tablespoons onto a tortilla.  3. On top of the mixture, add 3 slices of salami, a few slices of pepperoni, 3 slices of ham, and 3 slices of cheese. (Leaving about an inch border) 4. Sprinkle over a handful of shredded lettuce and carefully roll tightly.  5. I wrapped mine in foil and put in the freezer for 30 minutes before slicing.  6. Slice into 1” sections, and place in the shape of a football.  7. Make laces with the meat or the cheese.  8. Chipgate 2025 😵 3 Ingredient French Onion Dip Ingredients: 2 tablespoons olive oil  2 large yellow onions, thinly sliced into half moons or diced  2 cups Greek yogurt or sour cream 1 tablespoon @harmonyblends Ranch Blend Kosher salt & pepper to taste  To serve: Crinkle potato chips like Ruffles Sliced carrots and celery  Instructions: Heat the olive oil over medium low heat in a large skillet. Add the onions and a pinch of salt and pepper and stir every minute or so for 30-40 minutes until the onions turn a deep brown. Let them cool for 10 minutes before adding to the yogurt/sour cream. In a medium sized bowl, add the Greek yogurt/sour cream, onions, Ranch Blend, and kosher salt and pepper to taste.  Refrigerate for as long as you can wait to eat it (at least 30 minutes, up to overnight).
