Eagles pasta (kale pesto) Ingredients: -1 cup raw dinosaur kale -1 cup fresh basil -1 lemon, juiced -1/4 cup extra virgin olive oil -1/3 cup pine nuts -3 cloves garlic -kosher salt, to taste -freshly cracked black pepper, to taste -crushed red pepper flakes, to taste -about 1/2 cup pasta water -1/2 cup freshly grated Parmesan cheese, plus more for serving Directions: -To a blender, add all the ingredients. If itโs too thick, add more pasta water. Taste for seasoning. -In a large pan over medium heat, add the cooked pasta and pour in the pesto sauce. Incorporate the pasta in the sauce and cook until just heated up. Serve pasta into bowls. For red โฅ๏ธ Chiefs pasta (spicy arrabbiata) Ingredients: -1 tablespoons extra virgin olive oil -1/2 white onion, diced -3 cloves garlic, minced -1 tbsp tomato paste -1 (14 ounce) can crushed San Marzano tomatoes -1 tsp crushed red pepper flakes -1 tsp Calabrian chilis -kosher salt, to taste -freshly cracked black pepper, to taste -freshly grated Parmesan cheese Directions: -Heat olive oil in a large pot over medium-high. Add in white onion and cook, stirring frequently, until softened and translucent, 5-7 minutes. -Add in garlic and cook until fragrant, about 1 minute. Add in tomato paste and cook until slightly darkened, about 3 mins. Add in crushed tomatoes, red pepper flakes, Calabrian chilis, salt, and pepper. Simmer for about 10 minutes. -Add in the cooked pasta and stir to evenly coat. Serve with freshly grated parm. Enjoy!
