I’ve seen Parmesan crusted steaks on menus before, but never felt like it was worth getting… well I’ve officially changed my stance on that after trying it a few times myself!  Ingredients for Parmesan crust: • 1 cup of Mayo • 1 cup of Parmesan (I usually add a little extra!) • 1 tbsp thyme • 2 cloves minced garlic Just mix that together in a bowl and you’re set! The recipe for the steak is simple!  Reverse sear over charcoal or in your oven/smoker at 225°F until the internal hits about 120° and if you like it more on the rare side, aim for 110°-115°F. Then you want to take it out and coat the top with the Parmesan mixture.  Broil for atleast 5 minutes, and pull it out when the internal hits 125-127 and let it rest! I like to rest it for 10-15 mins.  Then slice it up and enjoy! I found out that people used to use some very unique things to smoke and flavor to their meat back in the day, and I’ve picked a few to try out for myself starting with this one!  I picked up some Fresh Pine Needles from a tree farm, and like I mentioned in the video… please pay attention to where you get the pine needles before using them with your food!  This cook was about 20-25 minutes in total on my @FYRSTARTER grill, and I used lump charcoal and a lot of fresh pine needles to get the steak up to 110-115°F before dropping it close to the coals for a final sear. I recommend pulling it off when the steak hits 125° internal for a ribeye cooked this way! It’ll rest up to 132-134° Then just make sure to rest it for atleast a 7-10 mins, and then slice it up and enjoy!!
