Mexican Lentil Soup *Detox Approved* Created by @livingessence.love Comment LENTIL SOUP for the recipe! Ingredients:  ā€¢ 1.5 c. dry lentils  ā€¢ 6 tomatoes  ā€¢ 1 medium onion  ā€¢ 1/2 bunch of cilantro  ā€¢ 2.5 tsp. sea salt, divided ā€¢ 3 carrots, diced ā€¢ 3 bay leaves  ā€¢ 1 tbsp. ground cumin  ā€¢ 8 c. vegetable broth  ā€¢ 1/2 jalapeƱo, optional  ā€¢ 1 avocado, for garnish  Method:  1. Wash and rinse your dry red lentils. Transfer washed lentils into a container and add 4 cups of water. Sprout the lentils by soaking them in water for 12 - 24 hours, then rinse again.  2. In a food processor, add tomatoes, onion, cilantro and 1 tsp. of sea salt. Process ingredients until they have a blended salsa texture and set aside. 3. Dice carrots into small ā€œpico de galloā€ size pieces.  In a medium pot combine, carrots, sprouted lentils, 1.5 tsp. sea salt, tomato blend, bay leaves, cumin and vegetable broth.  4. Bring soup to a boil then cover and reduce heat to simmer on low for 2 hours. Stir occasionally and add more vegetable broth if needed. Serve and add 2 tbsp. of diced avocado per serving. Enjoy! Makes 6 servings.
