A fun snack with a crunch  Ingredients 1/2 cup uncooked quinoa 1 1/2 cups dark chocolate chips 1/4 cup nut butter 1 tbsp maple syrup or honey Instructions Toast the quinoa – In a dry pan over medium heat, toast the quinoa for 3-5 minutes, stirring frequently, until it starts to pop and turns golden brown. Remove from heat and let it cool. Melt the chocolate – In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each, until smooth. Mix it all together – Stir in the nut butter, maple syrup, and sea salt until fully combined. Then, fold in the toasted quinoa. Shape & chill – Pour the mixture into a lined 8×8-inch pan, spread evenly, and smooth the top. Refrigerate for 30 minutes to 1 hour until set. Slice & enjoy! A little bit nutty, a little bit salty, and a little bit sweet, these no-bake bars from @Panaceas_pantry are full of flavor (and totally free from gluten, grains, and refined sugar)! Scroll down for the full recipe:  Ingredients: 14–16 Medjool dates, pitted 1/4 cup butter, at room temperature 1/2 cup hulled tahini 1/2 tsp fine salt 1/2 cup pistachio nuts 150g dark chocolate  Sea salt flakes, optional  Instructions: Grease and line an 8-inch square tin.  Pit and butterfly dates. Press into an even layer, sticky side down. Beat softened butter and tahini until creamy and add salt.  Spread over the date layer. Blend or crush pistachios into small pieces.  Sprinkle evenly. Freeze for 1 hour. Melt chocolate using a double boiler.  Pour over the pistachio layer and spread evenly. Add flaky salt if desired.
