How to make chia pudding : If you are looking for a healthy snack that also provides you with protein, omega-3’s and packed with fiber and taste good at the same time then give my chia pudding a try! You only need four ingredients to make it and it can be changed in so many ways as you can add fresh fruit or pair it with your favorite smoothie.  INGREDIENTS:   1 1/2 cup almond or coconut milk or any plant based milk of choice 2 tbsp chia seeds 1 tsp vanilla extract 3 tsp agave nectar or maple syrup INSTRUCTIONS:   1.Get a mixing bowl and measure out your non-dairy milk 2. Place 2 tbsp chia seeds into the mixing bowl with your non- dairy milk 3. Pour maple syrup , agave and vanilla in and mix  4.  Place it in the fridge until it firms up this can take at least 20- 30 minutes 5. If you’d like to make this the night ahead or meal prep you can do this by keeping it in a storage container.  6. Enjoy on it’s own or with fresh berries like I have pictured here or with your favorite smoothie on top. This soy chorizo tofu scramble toast is a savory breakfast option or a quick meal that you can put together quickly that takes minimum time to come together in one skillet.  The sky’s the limit as to what types of toppings you can add to your toast but for today I opted to use fresh tomatoes, parsley and smashed avocado. But the beauty of cooking in my opinion is that you can use what you have in your home that needs to be used up and get creative. INGREDIENTS:   1 tbsp avocado oil or olive oil or neutral oil  1 block extra firm tofu 2 tbsp nutritional yeast 1 tsp sea salt 1 tsp tumeric 1 tsp garlic powder 1 tsp onion powder 2 tbsp almond milk or non dairy milk 1 soy chorizo package INSTRUCTIONS:   1. Heat the avocado oil up in a pan over medium heat 2. Mash the block of tofu in the pan with a potato masher or with your hands 3.Cook for 3-4 minutes until the water from the tofu is mostly gone 4. Add in the nutritional yeast, sea salt, turmeric, garlic powder and onion powder  5.
