Broccoli Cheddar Soup 1-2 tbs Olive oil 4 tablespoons butter 1 large onion, chopped 1 heaping tablespoon minced garlic 1/4 cup AP flour 48 oz vegetable or chicken stock or you can mix both Season to taste with the following Spices: salt, pepper, garlic powder, onion powder, paprika, Cajun seasoning( I use KFRED) 1 cup shredded carrots 2 bags of prepared, broccoli florettes or 24oz. 2 cups half & half 16oz block sharp cheddar shredded Add olive oil and butter to your pan once heated you can add in your diced onion. We’re gonna sauté this for 4 to 5 minutes before adding in our heaping tablespoon of minced garlic. We’re gonna let that cook for another minute before we add in our flour cook that for another minute until it’s mixed in well. Now you can add in your vegetable stock and chicken broth. Add in your spices I would start off at 1 teaspoon of each. Now you can add in your carrots and broccoli. Bring to a boil. Reduce heat and simmer covered for 15 to 20 minutes. Once you uncover it, you should be able to break up your broccoli and smaller pieces with the back of a spoon. You can do a taste test at this point to see if you need to add more spices.Add in half-and-half and cheese. Cover and simmer for another 15 minutes or until broccoli is cooked to your liking.
