We’ve put just about anything in a empanada  lately and recently we made these sausage and pepper empanadas and have to tell you they were slamming. I think you’ll need to try these. 🌱Sausage and Pepper empanadas 🌱 4 tablespoons oil 4 vegan sausage links , chopped 1 red bell pepper , chopped 2 cubanelle peppers, chopped 1/2 large red onion chopped 3 garlic cloves, minced 1 tablespoon apple cider vinegar  1 teaspoon red pepper flakes  1 tablespoons nutritional yeast Empanada discs Chop the sausage, clean and chop the veggies . Heat 2 tablespoons of oil in a large frying pan over medium high heat. Add the sausage and cook for about 4-5 minutes . Add the garlic, onions and peppers . Add the red pepper flakes , nutritional yeast and  vinegar.  Reduce the heat to medium low, cover and cook for about 3-4 minutes. uncover, raise the flame a cook for another  2-3 minutes Place the empanadas on a flat surface , add a cup of spoonfuls of the sausage mix to the middle of the disc. Fold over and using a fork crimp the edges  Heat In a separate pan, add the oil.
