Mellow yellow homemade mayo 1 yolk 1/2 garlic clove, grated 1 tbsp white wine / apple cyder vinegar 1/2 tsp sugar 1/2 bottle of @mellowyellowoil Pinch salt 1. Whisk together the egg yolk, garlic, vinegar and sugar in a bowl. 2. Add a tea towel under your bowl to stop it slipping and slowly drizzle the mellow yellow oil into the yolk and whisk with your other hand until it becomes thick and glossy. 3. Finish with salt and store in the fridge covered for up to a week. Mellow Yellow Chilli Oil: This one is great on eggs, noodles, chicken, and you can also make a batch and keep it in the fridge for 2 weeks. 2 tbsp chilli flakes (I used Korean ones) 1 tbsp sesame seeds 1/2 garlic cloves, grated 200ml Mellow Yellow rapeseed oil Pinch salt Pinch sugar 1/2 tbsp vinegar 1. Add chilli flakes, sesame and garlic to a heat proof bowl 2. Heat oil on medium for 5 mins to approx 120c if you have a heat thermometer otherwise pour a little on the chilli flakes in the bowl you want the to just sizzle and release their aroma. Once hot pour over the hot oil and stir allow to cool slightly. 3. Add sugar, salt and vinegar and store in the fridge for up to a month.
