I recently made a three ingredient zucchini soup that was really easy to make and delicious and it started thinking about what other vegetables I could use to make a similar type of soup. Carrots was one of the first thing that came to mine because they’re just naturally sweet and creamy and blended so I thought that would be perfect and the soup actually came out better than I expected, it is three main ingredients and then a couple of extra optional ingredients. My only regret is that I didn’t make a bigger pot. 🌱Magic carrot Soup(only 3 ingredients 🌱 Ingredients 1 cup raw cashews 3 cups vegetable stock 6 carrots, peeled and chopped Additional optional ingredients: sea salt & pepper 1inch knob of ginger, grated 1/4 cup nutritional yeast Hemp seeds#cilantro Splash of olive oil Instructions Add the cashews, stock and Carrots in to a medium stock pot over medium heat and bring up to a simmer. Add the ginger and /or nutritional yeast if using Reduce heat to low and cook for 20-25 minutes or until the cashews are tender and break between your fingers. • Remove from the heat and carefully transfer the soup to a blender or use a hand blender . Season with salt and pepper Blend until the soup is completely smooth to serve.
