Veganuary - Day 3 While eating tofu is not required in a plant based diet, it certainly is a great source of protein and a relatively low calorie food. So what exactly do you do with this white block of food? Since alot of people are put off by the texture, I recommend grating the tofu and then seasoning it. Let me me know if you try the recipe below, ⬇️ I think you will love it Question: What do you do when you you want to make egg rolls, but you don’t have any egg roll wrappers? Answer: use tortillas and make egg roll quesadillas instead 🌱Easy Egg roll Quesadillas 🌱 1 tbsp oil 8 oz extra firm tofu 1 cup grated cabbage 1/2 cup grated carrots 1 tbsp toasted sesame oil 1 tbsp garlic powder 1 tsp ginger powder 2 tbsp tamari 1 tbsp coconut aminos 1 tbsp sesame seeds 1 tsp white pepper 3 large tortillas cut in half Dipping sauce: 1 tbsp tamari 1/2 tbsp gochujang 1/2 green onion chopped 1 tsp sesame seeds Grate the tofu , cabbage & carrots Heat a large frying pan, add the oil. Add the tofu, cabbage and carrots and sauté for 1 -2 minutes. Add the garlic , ginger, sesame oil, tamari, coconut aminos, sesame seeds and pepper. Cook for about 5 minutes more Place 1/2 of the tortilla in a plate . Add a scoop of of tofu mixture to the middle and fold in each side. Continue until all of the tortillas are filled Heat a large frying pan over medium high heat and add some oil. Add the quesadillas and brown on each side ( about 2-3 minutes per side) Stir together all the dipping sauce ingredients
