It was a pretty food dupe if you ask me πŸ˜‹  Recipe and Instructions:  Bowl base: choose from lettuce, mixed greens, rice, quinoa, or a mix of two options (i did quinoa)  Protein: I cooked chicken on the stovetop with turmeric, garlic powder, onion powder, thyme, rosemary, and black pepper.  Veggies: choose any variety you like. I went with air fried or roasted broccoli. Cucumbers, tomatoes, and onions would be good additions.  Toppings: store bought red pepper hummus (or use homemade) and homemade tzatziki. Low-fat feta crumbles and avocado.  Homemade tzatziki: mix together greek yogurt, lemon juice, shredded cucumber, and dill weed until a dressing like consistency is reached.  Lastly I warmed up half of a low carb whole grain pita bread. One pan spanish rice bowl!  Ingredients: Cooked chicen breast Rice Roma tomatoes (i used fresh and diced myself but feel free to use any canned variety)  Diced zucchini  Spinach  Lower sodium chicken broth  Cumin Garlic powder Onion powder Black pepper Cayenne pepper Turmeric (optional) Toppings: Low fat sour cream or non fat plain greek yogurt  Avocado or guac  Pico or salsa  Low fat shredded cheese  Instructions: 1) Heat olive oil on medium to low heat 2) add in tomatoes and cook with lid on until soft enough to mash down  3) Add in 1/4 cup chicken broth 4) Add in zucchini and spinach- cook with lid on for 3-5 minutes  5) add in rice and chicken and cook until rice has absorbed the sauce and the zucchini has softened to your liking.  6) remove from heat and transfer to a plate.
